I love it!!

I eat them raw in salad:

Mix: spinach (baby or regular, as you prefer) + cashew nuts (unsalted!!) + fresh white mushrooms (not canned!!) + bean sprouts.
Mix the sauce: olive oil + soy sauce + minced garlic.

Put everything togheter, let it stand 15/20 minutes and enjoy!

Haha why yes it can be quite delishh.:P For whatever reason I can't bring myself to eat cooked spinach. I think it might be the slimy texture, it reminds me too much of seaweed:D. But, I DO enjoy eating spinach raw in the form of a salad. My best friendd introduced this recipe to me last summer and I absolutely cannot get enough, its so good you wouldnt believe it:

raw spinach + sliced strawberries (or any berry of your choice)+ balsamic vinegar and olive oil. mix this up a little bit so the "dressing" gets throughout the leaves, and then sprinkle almonds on top (or walnuts, pecans, etc). Amazing, especially if the strawverries are really good, sweet ones.:] Perrrfect summer salad.
