June 17th Eat Your Vegetables Day - So have you??

Strategically created in the middle of National Fresh Fruit and Vegetables Month, this day is the perfect opportunity to re-introduce a healthy portion of vegetables into your diet. No doubt about it, Eat Your Vegetables Day was created to promote a more heallthy diet.......for life!
On this day, you are encouraged to eat vegetables for every meal, and for a snack. Better still, try to be a vegetarian....for the day. Short of that, any additonal vegetables at meal time today will honor the event, as well as make you a little healthier.
I haven't yet since it is only 7:14 a.m. here in Maryland. But yesterday we did eat our first cucumber from our garden!
We also finished up our lettuce. I haven't had to buy lettuce in a month, but will today. We are going to try and grow some more and hope the days stay nice and not too hot so we can get some more.

I love vegetables and eat them everyday. Yesterday my daughter was complaining about her 5yr. old eating her salad instead of his fries and i had to laugh because she always wanted the salad bar even before she could walk! I told her to be glad of it!

That's great! My youngest is like that! I love the fact that we don't get any strawberries from our garden because she always gets to them first.
