Redhorse Suckers

I was out fishing yesterday with some Canadian nightcrawlers on a hook with a bobber, and I caught three decent sized Greater Redhorse Suckers. I filleted them as I would a walleye, and right now they are in my freezer waiting for me to eat them. ^_^
Actually, this is my first time dressing this kind of fish. Does anyone have any experience they would like to share - either for dressing them or for cooking them? (I have heard that they are really good smoked.)

Wo...you must enjoy your time very much. How about the fish right now? Have you eat them right now? I don't know how to cook them and I even haven't heared their name before.ha ha...maybe you can get some suggestions from your wife or try to cook it by yourself way.

This particular kind of fish is so common that there are no limits on how many I am allowed to catch. I froze them and will save them for another time.
I actually did have fish tonight, though - walleye. We bought a box of "shake and bake" - you take the raw fish fillets and put them in a bag with the "shake and bake" powder, cover the fish, put it in a pan, put it in the oven, and it tastes good. (My wife supervised the cooking operation. She does very well.)

The fish is best when hot out of the oven... by the time it would make it to China, it would be far too cold. And it is never as good re-heated as when it is first cooked...
I know you are kidding. Perhaps it may happen some day that our paths will cross, and we will get together for fish (but no eggs...), but if not, we can certainly enjoy each other's company online.
