A bumper cop of tomatoes

My hubby got very ambitious and new we have a bumper crop of tomatoes. We are thinking crockpot to use the fresh ones and make sauce and chili but need the recipes. All the recipes I have found called for canned tomatoes...but we want to start with fresh. Can anyone enlighten us with some fresh tomato recipes for sauce etc that we can make in the crockpot? Thanks in advance for helping us with this wonderful dilemma.

I have lots of fresh tomatoes too, I am so enjoying them too. I have been having lots of tomato sandwiches, plus just having chopped tomatoes with dinner. I have also been cooking alot with them. I don't have any specific recipes. I made some swiss steak yesturday and used fresh tomatoes. Today I am making chili and using fresh tomatoes. I like to freeze tomatoes to use in cooking. I peel and deseed the tomato, I then chunk the tomato up and cook for a few minutes. I then scoop up the tomato with a slotted spoon and put it in freezer containers. I do put some of the juice in the container, I use the slotted spoon because I don't want the tomato to be too watery. Thats why I deseed them too, to make them less watery. I sometimes also put some onion and green pepper with the tomato. Good luck on making some sauces, you can always feeze that too.

Yes, the freezer is the plan for us. I love those suckers and have been eating several a day.

I have no helpful advice, although someday I hope to have some kind of helpful advice. But I just wanted to stop in and say hi. Maybe I just haven't been around, but I haven't seen much of you lately. I wanted to say hello and that I'm glad to see you again! : )

I have not been on that much lately. Been very busy at work and home and I try for the evening hours but as soon as I sit down, I seem to fall asleep. Maybe this month will be better then August was. Thanks for the welcome.

All the recipes that call for canned tomatoes just use the fresh ones instead of the canned ones..It will be much better than can tomatoes anytime.Fresh tomatoes are so much better in any food that calls for tomatoes..........

We have been doing that, but one can only eat so many tomatoes, so we want to cook and freeze them and enjoy them through the winter.

Hi Debs_place, I'm not sure what knid of sauce you want to make but I normally cut fresh tomatoes and onion ginger garlic and fry them with little oil then add tomatoes purree peperika and basil and then cook on low till tomatoes very soft then add some chili and simmer. Tamara

I also have too many tomatoes this year. But I have been giving them away to neighbors and family though. next year I plan on doing some canning of sauces etc with mine. I like the links in the 2nd response and will be saving them for future use. They will be great for the rest of the year as well until my tomatoes die off comes winter weather. A crockpot is perfect for creating sauce or paste because you can simmer for a day or two to remove any water and allow the spices to blend. I also recommend getting a Foley blender (a really old kitchen tool, but still available from Lehman's at http://www.lehmans.com/jump.jsp?itemType=PRODUCT&itemID=361 ) to remove seeds and skins. I'll look up some of my recipes when I get home this afternoon.

Wow That is awesome. I think that making your own sauces is a awesome idea. I am sorry I have no crockppot recipes that I can share! Man it is going to be smelling great at your house!

Yes, it will and the weather is no much nicer now then that 90 stuff we had earlier, you don't mind cooking or moving around.

You can just use fresh instead of canned they will aste so much nicer, make lots of salsas etc, yum I love tomatoes.
