Has anyone got a fairly simple recipe for a delicous pumpkin soup? Mine will be ready for harvesting at Samhain and I would like to make a soup with them? and if anyone has any other pumpkin recipes I would be grateful for those too pls?

This is a wonderful recipe that we use in Jamaica. I put mine in a slow cooker and let it cook all night. Very easy. Chop up pumpkin (don't worry about amount - use what you haveand potatoes, carrots (any vegetables) onion, black pepper and salt and garlic. Cook overnight. The next day, puree all contens of slow cooker. It will be thick because of the potato. When you are going to serve then heat ion a pot and 5 or so minutes before serving add coconut milk. You should be able to buy in a tin or you may find a packet of the coconut milk to purchase. This is a truly delicious and nutritious soup. Serve with garlic bread or any old bread rolls. YO can use all veggies in fridge that you may be thinking of discarding as they are not looking so hot.
