Mexican Rice

Does anyone have the recipe of how to make the red Mexican rice you get in Mexican restaurants? I have not been able to find anything that looks right in any recipe books or online so far. I love the rice but don't know how to make it. Can you help? It isn't spicy, but it is flavorful and tender.

I don't know how my Spanish rice compares to restaurants, but I think it is pretty similar. Most of the time I will melt some butter in my saucepan, then add in onions and some green or red pepper and cook that up a bit, then add in my rice and brown it. Then I add my liquid, usually broth or water and then about half a cup of salsa, and cook the rice like I'd cook it any other time.
It's delicious.

Wow, this is an old discussion. LOL The Mexican rice I am talking about is just plain red rice. Apparently cooked in tomato juice or sauce or something. It is what I find at restaurants. Spanish rice, at least the kind I know of is made with ground beef. I've also seen it as Spanish noodles instead of using rice.

to cook the mexican red rice you will need (1/2)POUND of rice you need to get some roma tomatoes (6 This are best for the color and flavor)), 1 medium onion, 1 clove of garlic, litlle thime, and a 1 bay leave, cook all this in 2 cupas of water, add some consome, (chicken powder seasoning), boil for a few minutes, and blend it to make a thin sauce, on the mean time sautee your rice with oil, for few minutes and sthen instead of water you will put the sauce, and cook.

The rice I am looking for doesn't have anything else in it except the coloring though. It is also very tender. I don't think it has any special spicey flavor. I am just wondering how to make it red like that. Maybe it is just tomatoes or tomato juice.

I am peeking in here because I love rice also! And i would not mind a few new rice dishes! Hopefully someone that has made this rice dish will show up and give us the recipe.
I hope that we get a few recipes. That are tried and true!
