Are you one of those who dislike veggies? How do you compensate for its lack?

Many dislike eating vegetables. Vegetables are rich sources of phytochemicals (anti-toxins), anti-oxidants, essential minerals, vitamins, fibers and nutrients. In fact, vegetarians are observd to have longer lives. If you like vegetables , what is your favorite and if you don't eat it, how do you compensate for your lack of vegetable intake? My favorite vegetable are potatoes, eggplant and cauli flower.

My children do eat veggies but they are a bit fussy about which ones they will eat, but they do like lots of fruit so to make sure that they get there five a day they eat more fruit. I cook quite a few casseroles so they veggies get into the juice and they dip bread into the gravey juice
