nice jamaican curry chicken, dumplings and rice.

WHAT U WILL NEED:
theres no measurements but if u have a bigger family u will need to use more.
skinless chicken or chicken u skin urself
thyme, fresh or dried
ground black pepper
some plain flour
rice
kidney beans
tin of coconut milk x 1 and a half tins
few fresh tomatoes
dark soya sauce
sweet potato
carrots
and some water.
salt.
chicken seasoning powder
curry powder
onion.
garlic
oil
first of all u need to wash and skin the chicken, and chop up into pieces, or u can leave it on the bone.
place in a mixing bowl and add a few drops of soya sauce and rub it in so that all the chicken is covered. then add a few pinches of thyme, black pepper and chopped onion and garlic, then add curry powder and chicken seasoning powder and a little salt so that all of the chicken is covered.
now my dad says its best to leave this in the fridge overnight or at least for a few hours so that the chicken is well seasoned.
after leaving for a few hours heat some oil in a deep pot or saucepan, now u need to brown the chicken.
pick all the bits of garlic and onion off the chicken and place these in a bowl as u will need them later.
add a few pieces of chicken to the oil and fry until the chicken takes on a brown appearance on the outside, then turn over and repeat until the chicken is brown. then place the browned chicken on a plate until u have completed the process with all the rest of the chicken.
once u have,add all the chicken back to pot and add the onion, garlic, chop some fresh tomatoes and add these, add the sweet potatoes and some chopped carrots TO the pot.
add the tin of coconut milk, mix and then add just enough water so that all of the ingredeints are covered. not too much or it will make it too watery.
then cover the pot and bring to the boil.
stir once in a while to check food not sticking to bottom of the pot.
once it has started to boil, turn heat down so that its simmering. now u can start on the rice and dumplings.
for the dumplings u need some plain flour and water in a mixing bowl, same procedure as making bread, u have to make it like dough, so add a few drops of water to the flour and kneed until it is dough texture. too much water and it will be runny like pancakes lol.
then break small pieces off the dough and roll into any shape u like, then add straight to the pot of chicken.
for the rice u need:
a few slices of onion, some thyme and a piece of garlic and half tin of coconut milk. and the kidney beans.
fill a pot with water and add as much kidney beans as u want, but crush them before adding them to the pot, so that the water changes to the same colour as the kidney beans. this will give the rice a slight brown look and will also insure that all of the kidney beans are cooked til soft.
add the cocounut milk and a little thyme and the slices of onion and the garlic.
bring to the boil and then turn heat down to a simmer, then cover.
the curry should be ready in around 40-50 mins but u have to taste it to be sure as it all depends on the amount of food in the pot and also what heat u have it on. but the fluid should be taking on a cremier texture in the pot, and also will have lowered .
im sorry i do not have exact timings and measurements but this is the way my dad taught me to make it and it tastes so good i thought i would share it with u all, if u try it, or u have any other receipes please let me, know, and let me know if u tried this and how it worked out.

hiya, if u try it let me know how u get on, im thinking maybe i should have posted it the way i make it, for exampke stated how many tomtoes and how many cups rice on average etc for my family. might have made it easier for people to work out thwir own measurements. is there a way to edit posts on this site?

it might help, i dont know if you can edit original posts but you can always add to the post with a response.
Im no good with exact measurements, i prefer to go with a cup of this, a pinch of that then just taste as i go along and alter it accordingly!!!!
I prefer it hot but my family wouldnt eat it then so i think i'll have to go with a milder version!!!

Boy, this sounds so good.
I wish i had extra money i run to the store and buy all the stuff to make it.
I love curry dishes, my mom used to make a lot of meals with curry.

its the most delicious thing i have ever tasted. oh i forgot to add if u like it really hot, just add more curry powder or hot curry powder.
the first time i made this me and my kids literally ate the whole pot, we had it for lunch, dinner and also breakfast the nest day lol
