Peanut Butter Cups

My mom's absolute favorite food in the whole world is peanut butter cups. Unfortunately, she's allergic to soy. And pretty much all chocolate has soy lecithin in it. So she hasn't had peanut butter cups in years. Well, I found some soy-free chocolate chips for sale online, and I want to use them to make her some peanut butter cups for Christmas! Does anyone know of a recipe for peanut butter cups that uses chocolate chips? I found one online that mixes chocolate chips with vegetable shortening. The only shortening I have on hand is Crisco, and that has soy in it. Next time I go to the grocery store, I'll look for shortening that isn't made from soy, but I'm not sure if I'll find any. I've heard that Spectrum Organic Shortening is soy-free, and I think they sell that at the local health food store. So hopefully I'll be able to use that. But it would be nice to have some sort of back up plan. So if you have any recipes at all for peanut butter cups that use chocolate chips, I would greatly appreciate it!
