Thanksgiving Day is almost over - did you cook or did someone else?  | | | | It was just me and Mom today. My daughter cooked for her boyfriend. My guy friend made the rounds with his family. My son....I have no idea since he didn't call. He might be working - he might be at his dad's. But, I did the cooking for the two of us. And, I have to say, I did pretty darned good! Mom, of course, thought I was being a slacker all day. And, I was. I just don't enjoy the whole domestic goddess thing like she always has. She just loves planning out meals, working on this that or the other throughout the day, spending the time in between cleaning the house. Yeah - that's just not me. But, I do think I can cook pretty well for someone who doesn't like it all that much. I wanted to make a couple pumpkin pies this morning, but Mom said no. Considering she ate the other one we had between Monday and last night, I thought it might be nice to have some for today, but she didn't want me to make any. I started preparing the turkey just after noon. We only got a breast, 6 2/3 lbs. Plenty for two people (and then some). I rinsed it out, salted it inside and out, sprinkled poultry seasoning all over it top and bottom, and sprinkled some celery seed inside the large cavity. That is because I never went and bought celery or onion to make home made dressing to stuff it with. I had brought up the roasting pan, but it doesn't have a rack, so I fashioned a lifting strap from some heavy duty foil I folded into thirds to lay in the pan to set the turkey on. Then I started making the stuffing. Like I said, I hadn't bought any celery or onions and I knew Mom didn't want just some boxed stuffing. But, I did have a box of gourmet stuffing with cranberries and pecans. I also had a half loaf of bread, some celery soup and some dried onion flakes, plus loads of raisins and an apple. I decided to try my hand at culinary creativity. I made the boxed stuffing mix first. Those are always quick and easy. Then, I tore up the bread, seasoned it with poultry seasoning and dried onion flakes and then opened the soup and stirred it through the bread until it was all moist. I diced up the apple and added about a half cup of raisins, stirring it all together. Once that was done, I added the already made cranberry stuffing to it and mixed both together. I put some in the cavity of the turkey breast covering it with a piece of foil since there was no skin to pin shut and put the rest in a casserole dish. I then put the turkey in the oven on a timer and put the casserole of stuffing in with the turkey 45 minutes before the turkey would be done. I wasn't sure how the stuffing would turn out. I honestly winged it on this one. But, I have to say it was some of the best I have ever made!! Even Mom had a second helping, which she doesn't do if she doesn't like something. It was so moist, which I find stuffing to not be if not cooked inside the bird. I'm really very pleased with how it turned out. We also had mashed potatoes, sweet potato casserole, peas and homemade turkey gravy. For the gravy, I used the turkey drippings plus the potato water thickened with a flour and water slurry. No meal is complete without a nice cold can of cranberry sauce as well. No salads, no desserts (remember - Mom ate the pie herself), just the hearty goodness of the ultimate comfort foods. I did have one failure and that was the canned biscuits I put in after pulling out the turkey. Timed them and everything, but they were hard, didn't rise, and had to be chiseled off the baking sheet. I probably should have donated them to the Philadelphia Flyers - they couldn't do any worse with these little concrete gems than they already do with regulation pucks. But that's OK - there was so much dressing, we really didn't need any other kind of bread. So, how was YOUR meal? Did you cook? Did someone else? | | Sounds like you had a fantastic culinary feast as well as I did and my two kitties enjoyed it also...now the three of us, me, Pyewacket and Kissy are in groggy food comas..LOL One way I found to cut costs of stuffing..Instead of boxed stuffing mix, I get croûtons..they're usually up to two dollars cheaper than the boxed kind that sells as stuffing mix..same thing actually..my problem though I didn't have enough..I was uh....munching on them the night before and nearly ate the whole boxful of croûtons..LOL..so to spread it out, I added breadcrumbs...to that I added the raisins, apple slices, celery and cooked up Italian sweet sausage (took the meat out of the casing and cooked it up) Even when my mother and grandmother were alive I kind of officially became "the" cook about thirty years ago and did all the cooking all the time. I went full steam ahead and started cooking back then..self-taught with French cooking, and I seemed to have inherited my great-grandmother's gift for cooking as my mother and grandmother couldn't cook to save their lives...LOL. I actually love to cook, but now that I'm on my own really don't fuss as much as when my grandmother and mother were alive...so holidays are my time to shine as THE cook again. | | | | | | | jerzgirl (3245)

| | My mother was THE cook around here. I was never asked to help cook or shown how. I could fix things on my car, but was pretty sucky in the kitchen. Collected recipes like a fiend, but didn't really understand the processes behind them. I don't really like cooking - not even close to my mother's love for it. But, I have gotten pretty good at putting together a meal. I still have the occasional bomb (and my baking skills aren't top notch - the biscuits pretty much tell that tale), but overall, I think I can pull off a pretty decent culinary delight. | | | | | | | Flour Looking For Flour? | | Well, since mom is in a place that has WONDERFUL food, my brother and I took mom over to the Manor to eat. Mom had turkey that was tender enough to cut with a fork, corn bread dressing, and some aspergrass with a bit of cranberry sauce. She also had 3 peices of shrimp and then a slice of chocolate cake. My brother had the endive salad, then went back for a slice of prime rib, dressing, bourbon yams, then went for turkey, dressing and more yams. He ended the meal with a creme brulle, that they never seem to carmelize enough. I think he might've had something else too, I'm not sure. I had a lovely salad with butter leaf lettace, 3 peices of shrimp, some watermelon, cheese, prime rib, wild rice, and aspergrass. For dessert I had angel food cake some blueberries and some chocolate covered strawberries. After we were done, I had to go back to work for another hour then to pick up the roommate at her folks. There I had a bowl of pumpkin pie custard that her mom makes because the store bought crust I can't eat. | | | | | | | jerzgirl (3245)

| | Well, mom lived in basically a nursing home, but its attached to a place where the people did live before independently. There are people in the Manor that go check on the people in the health care center, and they care, because tomorrow they may be in it! We've lodged a complaint against one of the aides and she's not there anymore. She didn't seem to understand this wasn't like the nursing home she worked in at her other job, this was one that people paid lots of bucks to be in, not a medicaid place that people were stuck in! I even WARNED her before we lodged the complaint that this was different. Oh well, live and learn. So, what we did was just roll mom over to the main dining room. Not like Monday night when my bro picked up mom and took her out so we'd eat at a resturant that is my favorite. I can't take mom in my car, because my car is really a mini-van and she can't get into it easily. My brother has a sedan type car and can get her into it. Your alls meal sounded wonderful and I'm glad to hear how it all turned out for you and Your Mom; Our family stuffed ourselves too, and today we get to do it all over again as they could not come on Thanksgiving; so once again today will be Leftover day Turkey, Dressing, rolls, Gravy, coleslaw again, cranberry sauce, My Dad's spiced Apple rings he makes, you know the one, and peas, BLEH I HATE PEAS..oh well I'm not eating it I am sure he probably made deviled eggs too just for Kim his youngest GrandDaughter though she's not that young any more really in her mid-20's but he spoils her rotten; go figure???
