Need excellent recipes for vegan treats

My friend is trying to start a business selling vegan treats like cookie bars, cupcakes, banana bread, etc.
I have been the fortunate recipient of some of her many experiments.
She made an equivalent to the Tollhouse Magic Cookie Bars one time but had trouble with the graham cracker crust crumbling. They were absolutely delicious though -- a combination of coconut, chocolate and graham cracker.
Does anyone have any tried and true great recipes I could share with my friend. She wants something that people will go wild over and want to buy more and more. She is a very sweet and deserving friend and I so want her to succeed at this business.

Cranberry-Orange-Pear Granola Crisp (from PCRM)
4 large firm ripe pears, peeled, cored, and thinly sliced
2 1/2 cups cranberries, thawed if frozen
juice and finely grated peel of 1 medium orange
1/4 teaspoon salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground ginger
3/4 cup thawed frozen pear or apple juice concentrate
2 tablespoons cornstarch
2 cups reduced-fat granola (no more than 4 percent calories from fat), such as Health Valley
Preheat oven to 400 F.
Combine pears, cranberries, orange juice, orange peel, salt, nutmeg, and ginger in a large bowl. Stir juice concentrate and cornstarch together in a small bowl. Immediately pour into the fruit mixture and blend well. Pour into a 2-quart nonstick baking dish (or a baking dish lined with parchment paper). Bake for 20 minutes. Remove from the oven and reduce heat to 350 F. Stir fruit mixture thoroughly and sprinkle granola evenly on top. Bake for 20 to 30 minutes or until the fruit is soft. Best served warm, makes about 8 servings.

Hi Bethany, thank you for the delicious sounding recipe. I am going to pass it along to my friend and I am sure she will try it. I would like to try it too. My friend's business was starting to take off fairly well but since we have had so much trouble with the economy for the past few months, things are kind of slow. She also is in another business with her husband which takes a lot of her time. She did have a few buyers for her products, one of the biggest, though, lost the lease on the property she was renting and is in the process of finding a newer cheaper place. Until then, the way the economy is right now, things are kind of slow. People don't have a lot of extra money to spend on treats. One strategy I told my friend was to basically do things, push the products, on or for the holidays. There are enough holidays out there that this would keep her busy year round. Most people will spend a little extra for say Mother's Day or Valentne's Day, etc. I think as the economy starts to pick up, so will my friend's business. She cannot help but be successful if she combines her talent, good tested receipes and love into what she does. She is a very giving person who should be rewarded richly.

Hey, my daughter uses and swears by this website called VegWeb at vegweb.com. It has a LOT of recipes for ALL sorts of vegan stuff, INCLUDING snacks. My daughter wants to start a vegetarian/vegan restaurant in her future too...hope that helps a little.
