How much cooking oil is enough in a serving of fried food?

I am deep frying a serving of fries and chicken and how much of the cooking oil is actually enough in the cooked food. I am using Canola oil and after the food is cooked and drained I am thinking that there isn't much oil left in the food. What do you think?

i'm trying to use a teaspoon whenever possible for steak, cover the bottom of the pan with peanut oil for fillets, and trying to avoid fries unless they are oven fries. I think peanut oil is best, but it is hard not to use olive oil for pasta and fish.
