| | I do both. It is more convenient to buy pre-ground coffee, however occasionally I buy the beans and grind them when I need them. Grinding just before brewing will give you more of the oil of the bean, and hence more flavour. Pre-ground coffee loses a lot of the oil as after grinding, much more of the bean in in contact with air. There are tips for preserving flavour, one of which is if you buy pre-ground, buy small packs as opposed to large ones. The repeat opening and closing of packs or bags over a long period of time increases the loss of the oils, and the grounds become drier. You can apply the same logic to beans, though the rate of drying is lower. Most baristas I have spoken to will only use small bags (max 1kg or 2 pounds) as anything larger takes them too long to use, and the beans dry out.
