Yummy Recipes for the holidays

Peanut Butter Balls Mix: 1/2 Cup melted oleo 18 oz crunchy peanut butter Add: 3 Cups Rice Crispies (4 Cups for extra crispy) 1 Lb. powdered sugar Mix by hand. Form into balls. Coating: 12 oz package chocolate chips 1/2 stick parowax Put in double boiler, don't get too hot. Roll peanut butter balls in chocolate and place on waxed paper to cool. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* Peanut Clusters 1 pkg. chocolate chips 1 (12 oz) jar peanuts 1/2 pkg almond bark Melt almond bark in double boiler. Stir in chocolate chips. Add and mix in peanuts. Drop by spoonfuls on waxed paper. Let set till hardens. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* Peanut Butter Cookies 1 cup peanut butter 1 cup sugar 1 egg Mix all ingredients. Form into balls onto cookie sheet. Press with fork dipped in sugar. Bake at 350 for about 8 minutes. *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~* Sour Cream Fudge 2 Cups sugar 1/2 tsp. salt 1 Cup sour cream 2 Tbs. butter 1 tsp. vanilla 1/2 cup chopped walnuts (optional) Combine sugar, salt, and sour cream. Cook, stirring occasionally to soft ball stage (236 degrees). Add butter. Cool at room temperature, without stirring, until lukewarm. Beat until mixture looses gloss. Add vanilla and nuts if used. TREE - a christmas tree
Mini Christmas Puddings 1 x 800gm Dark Fruit Cake 1/2 - 1 cup Orange Juice 1 cup Coconut Icing Sugar Red and Green Jelly Lollies 1. Break Fruit Cake into crumbly pieces. 2. Pour a little Orange Juice at a time into crumbled cake - until moistened. 3. Roll mixture into balls (a little smaller than a golf ball). 4. Chill in Fridge. 5. Mix Icing Sugar with Orange Juice. 6. Decorate top of balls with icing. 7. Cut up Lollies into pieces and decorate on top of the icing to make it look like holly. 8. Chill and serve.

Chocolate Christmas Trees Makes approximately 45 250g packet plain sweet biscuits, crushed 1 cup desiccated coconut 2 tablespoons baking cocoa 1 tablespoon honey (optional) 395g can sweetened condensed milk 1 cup white or dark melts Coconut, sprinkles, silver and gold cachous, for decoration Combine biscuits, coconut, baking cocoa, honey and sweetened condensed milk in a large bowl, mix well. Shape teaspoonfuls of chocolate mixture into cones, refrigerate until firm. Drizzle top of cones with melted white or dark chocolate melts, decorate as desired, allow chocolate to set. Store in an airtight container and place in refrigerator

These sound really great. I will give a couple of them a bit of a test run before Christmas and if our friends' children give them the "thumbs up", then they will make a nice addition to the Christmas table. :)

Thanks for the recipes. I have a question about the fudge. I have never seen a recipe for it with sour cream. Is it good?
