Blue cheese - do you like it?  | |  Blue cheese is a general classification of cow's milk, sheep's milk and/or goat's milk cheeses that has had Penicillium cultures added so that the final product is spotted or veined throughout with blue or blue-green mould. Some blue cheeses are injected with spores before the curds have been formed and others have spores mixed in with the curds before they are formed. Blue cheeses are typically aged in a temperature-controlled environment such as a cave.

But now that I'm older and have a more sophisticated palate, I can't get enough of blue cheese; LOOVVEE it. I got a question, though; sometimes, I would have some blue cheese that's been sitting a long time in the fridge and when I take it out, there's more moldy growths that look kind of suspicious (just doesn't look like the original blue veins in the cheese). Is this okay to eat? I usually error on the side of caution and just toss it out. Am I wasting perfectly good cheese when I throw it out?
