The most enjoyable part of the winter holiday season, for me, is baking holiday cookies. I bake a ton of different types of cookies each year, and use them for neighborly gifts, send to work with the husband, bring to holiday get-togethers, and indulge our household holiday sweet tooth.
Baking cookies is also a wonderful way to incorporate family quality time into what can often be a hectic time of year.
So, I thought I would share one of my families favorite holiday cookie, and if you have a favorite (not something you copy and paste from some other online website), you can feel free to share it here.
Hope you enjoy the cookie recipe exchange discussion. Add a holiday baking story, add a recipe, add something to help get us into the festive mood.~~~~~~~~My Recipe~~~~~Linzer Tarts
Ingredients you will need:1 cup of butter (softened)
2 1/2 cups of flour
1/2 cup of confectioner's sugar (powdered sugar)
1/4 teaspoon of baking powder
2 teaspoons of vanilla
2 tablespoons of milk
seedless raspberry jam
apricot jam
strawberry jam
nutella
Steps:
1) you will sift together all the dry ingredients EXCEPT for the confectioner's sugar.
2) Cream the softened butter with the sugar and the vanilla.
3) Add the sifted dry ingredients and the milk to the butter mixture until blended and forming a dough.
4) You will chill the dough for about an hour in the refrigerator.
5) Once chilled, pre-heat the oven to 350 degrees F or 175 degrees C.
6) lightly flour your working surface, and roll out a portion of the chilled dough.
7) take your cookie cutter and cut rounds into the dough (remember these are sandwhich cookies--need a top and bottom half)
8) then take the cap to your vanilla bottle and cut the centers out of half the rounds you have made.
9) place the tops and bottoms on to a cookie sheet (lined with parchment paper).
10) Bake for about 10 minutes or until lightly browned. Remove from oven.
11) Take your fillings and spoon a bit on to each bottom round and top with a topper, then pop cookie back into oven for 1-2 minutes. Remove from oven and place each cookie onto a cooling rack.
12) Once cooled, you can lightly dust cookies with confectioner's sugar.

I love baking cookies. I do not think I will bake very many this year, but I am going to at least make peppermint sugar cookies colored and shaped like candy canes. May also make some others, but we will see what times allows for. I am contemplating making stained glass cookies this year.

I've made a version of peppermint candy cane cookies one year. The stained glass cookies sound good, if you feel like sharing the recipe, I'd definitely appreciate it.

Not sure what website I found the original recipe on, but here is one with a similar recipe. It says it is for Hanukah, but you can make the cookies in Christmas shapes or whatever shapes you want.

Thanks for stopping back with the recipe. I think I am going to add that cookie recipe to my cookie list for next year. Each year, I like to add 1 or 2 new recipes to my cooking baking for the holidays.

those sound very good. i wish i had something that i baked, my mom is the cook and baker of the family, however i did not inherite that gene. lol. i have learned a couple things but not too much.

My mom never let me in the kitchen to cook food with her, but when it came to baking she and I were always baking something. I love baking, I love cooking, and what's really nice is that my husband also likes to bake and cook.

thats nice that you enjoying baking, i really do wish i had learn how when i was younger, but i lived with my dad most of the time i think that is why i didnt get the baking gene.

You can eat this delicious food that I will send you now.
A chicken and ham pie with mixed vegetables and seasonings.

Ingredientes:

1 whole chicken, cut up (2-3 lbs)
2 ribs celery, with tops, cut in 1-inch pieces
1 small onion, sliced
1 1/2 teaspoon salt
3 cups water
1 center cut ham slice, (about 1 pound)
6 tablespoons margarine
6 tablespoons flour
1/4 teaspoon pepper
1pkg (10oz)frozen mixed vegetables

Preparation:

Rinse and pat chicken dry. Combine chicken pieces, celery, onions, and 1 teaspoon of salt with water in a large saucepan or dutch oven. Heat to boiling. Cover and simmer 1 hour. Remove chicken pieces from broth, cool until easy to handle. Strain broth into a separate container then add enough water to make 2 1/2 cups. Skin and debone chicken, dice chicken meat and the ham, sey aside.
Melt margarine in the dutch oven or large skillet over medium-low heat, blend in flour, stirring constantly until smooth and bubbling. Stir in broth a little at a time, stirring constantly, until mixture is thick and bubbling. Stir in chicken, ham and mixed vegetables, geat to boiling. Taste for seasonings.
Pour mixture into a 1 1/2 to 2 quart baking dish. Prepare pie crust, cover chicken mixture and flute edges, Bake at 425º for about 30 minutes, or until pastry is browned.

And now you can enjoy this delicious dish of food. Call all your friends and family to eat it.
