All you Garlic lovers..here are some facts |
|
Are you a garlic lover and can't do without garlic in your cooking or meals? I love garlic and use it often in various cuisines. Garlic not only pleases the palate but also has medicinal values. So here are some goodie facts and tips about Garlic..
The more finer you cut the garlic the stronger the garlic flavour in your dish. If you want only mild flavouring cut the garlic into bigger chunks. Lightly crushing the cloves with the ball of the hand or flat of a knife makes peeling the skin much easier.
When crushed or finely chopped it yields allicin, a powerful antibiotic and anti-fungal compound (phytoncide). It also contains alliin, ajoene, enzymes, vitamin B, minerals, and flavonoids.

Did you know eating parsley actually reduces "garlic breath"? That works only for a short while though so don't forget those mints after garlic!!
And here is a quick easy to make healthy dish
Garlicky Holy Guacamole:
2 ripe small Hass avocados 1 lemon, juiced 1 large clove garlic, minced 1 jalapeno, seeded and finely chopped 1 small plum tomato, seeded and finely chopped 1/2 small yellow skinned onion, finely chopped 1 teaspoon coarse salt Blue corn tortilla chips, for dipping
Cut avocados in half around the pit. Separate the halves. Pop out pit with spoon, then scoop flesh of avocados into a bowl. Squeeze the juice of a lemon over the avocados. Squeeze the juice with the lemon halves facing cut-side up, allowing the juice to spill down over the sides of the lemon into the bowl. This method keeps the seeds in the lemon and out of the guacamole. Add garlic, jalapeno, tomato, onion and salt to the bowl. Mash and mix the ingredients into a chunky dip using a fork. Serve with blue corn tortilla chips.
Enjoy!!

2. Pups2Hug (338) | 3 years ago | YES! Garlic is so tasty and healthy - I LOVE it! Whenever I stir-fry vegetables, I always brown crushed garlic first then add the vegetables and it tastes so yummy!
This recipe sure sounds good; however, I can't handle jalapeno very well - do you think I can just eliminate the jalapeno from this recipe?

greengal (2946) | 3 years ago | Ya you could do that..jalapeno is basically to make it a little spicy since avacados are so buttery and mild tasting. I made it once without jalapenos and it tastd just fine:)

4. BittyBiddy (1083) | 3 years ago | I love garlic. I'd eat it with everything. And I haven't had a cold in ages. I think it's because I eat so much of the stuff. If I'm cooking pasta I'll always add 3 or 4 cloves of garlic to the sauce. I can never have enough garlic or too much of it.
Has anyone every tried this recipe?
40 Clove of Garlic Chicken
3 whole heads garlic, about 40 cloves 2 (3 1/2-pound) chickens, cut into eighths Kosher salt Freshly ground black pepper 1 tablespoon unsalted butter 2 tablespoons good olive oil 3 tablespoons Cognac, divided 1 1/2 cups dry white wine 1 tablespoon fresh thyme leaves 2 tablespoons all-purpose flour 2 tablespoons heavy cream
Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain the garlic and peel. Set aside.
Dry the chicken with paper towels. Season liberally with salt and pepper on both sides. Heat the butter and oil in a large pot or Dutch oven over medium-high heat. In batches, saute the chicken in the fat, skin side down first, until nicely browned, about 3 to 5 minutes on each side. Turn with tongs or a spatula; you don't want to pierce the skin with a fork. If the fat is burning, turn the heat down to medium. When a batch is done, transfer it to a plate and continue to saute all the chicken in batches. Remove the last chicken to the plate and add all of the garlic to the pot. Lower the heat and saute for 5 to 10 minutes, turning often, until evenly browned. Add 2 tablespoons of the Cognac and the wine, return to a boil, and scrape the brown bits from the bottom of the pan. Return the chicken to the pot with the juices and sprinkle with the thyme leaves. Cover and simmer over the lowest heat for about 30 minutes, until all the chicken is done.
Remove the chicken to a platter and cover with aluminum foil to keep warm. In a small bowl, whisk together 1/2 cup of the sauce and the flour and then whisk it back into the sauce in the pot. Raise the heat, add the remaining tablespoon of Cognac and the cream, and boil for 3 minutes. Add salt and pepper, to taste; it should be very flavorful because chicken tends to be bland. Pour the sauce and the garlic over the chicken and serve hot.

6. sunshinecup (5911) | 3 years ago | I am an avid garlic user. I love the stuff, so vampires beware! LOL There really isn't many dishes I don't use it in. My grandmother told me once, that garlic helps you sleep better at night. It also seems to help repel misquotes. I feed garlic tablets my dog that I buy from the vet.

8. bunnylady01 (460) | 3 years ago | I love garlic as does my family. I use it almost every night in whatever I am making.
I use it slightly crushed, minced, diced, chunked or as a paste depending on my dish.
I love it in dishes containing chicken, beef or pork. Vegetables with garlic are excellent. Soups and stews always have garlic in. We love garlic bread, rolls, biscuits.
Garlic is a wonderful addition to any meal and is awesome for your health.
