Scallops, how long to cook?  | | How long do you cook scallops? A set number of minutes, or until they are opaque? I had them in a upscale restaurant, and one time they were like a little pink? in the middle. I told the waitress they weren't done, so she told the chef. He said that's the way they're supposed to be. Anyone ever heard of this?

A wet scallop will simply boil or steam and won't develop the nice caramelized crust you want. Bay scallops usually cook to perfection in 3-5 minutes; larger sea scallops take 6-10 minutes to cook. Scallops are done when they turn white and opaque and are easily pulled apart.
Any recipe that is delicious with shrimp will also work well with scallops. As always, add or subtract ingredients at will, according to your tastes. After you start cooking, watch the scallops carefully checking it if it is already done.
They will begin to firm up the second that they are hot and when fully cooked they should have a slight rubbery give when pinched. Cooked too long, they will quickly turn into little chewy rubber bullets. Just be sure the scallops aren't overcooked; that's the only thing that will ruin them. Keep some scallops in your freezer this summer and enjoy these delicious recipes. Anyway, have a nice day!
