Recipes To Use With Buttermilk Pancake And Waffle Mix

I posted a recipe for Buttermilk pancake and Waffle Mix a while back and these are some recipes to use with that mix. You will need to make the mix prior to making any of the recipes. Hope you enjoy the recipes and the mix. I keep this mix along with many other mixes on hand at all times. I always use olive oil instead of vegetable oil in all my recipes. It is better than commercial mixes and has no preservatives. The Buttermilk pancake and waffle mix can be found here http://www.mylot.com/w/discussions/589439.aspx Buttermilk Pancakes 1 egg beaten 2 Tablespoons vegetable oil 1 cup water 1 1/2 cups BUTTERMILK PANCAKE AND WAFFLE MIX Recipe found here for the mix http://www.mylot.com/w/discussions/589439.aspx In a medium bowl, combine egg, oil, and 1 cup water. With a wire whisk, stir In Buttermilk pancake and waffle mix until blended. Let stand 5 minutes. Stir in additional water for a thinner batter. Preheat griddle according to manufactures instructions. Lightly oil griddle. Pour about 1/3 cup batter onto hot griddle to make 1 pancake. Cook until edge is dry and bubbles form. Turn with spatula. Cook 35 - 40 seconds . Serve with syrup. Buttermilk Waffles 2 1/2 cups BUTTERMILK PANCAKE AND WAFFLE MIX Recipe for mix found here http://www.mylot.com/w/discussions/589439.aspx 2 cups water 3 eggs separated 1/4 cup vegetable oil Add 1/2 cup chopped pecans or dried blueberries if desired Preheat waffle baker. In a large bowl combing buttermilk pancake and waffle mix, water, egg yolks and oil. Beat with a wire whisk until just blended. Do not over mix. In a medium bowl, beat egg whites until stiff. fold into egg yokl mixture. Bake according to waffle baker instructions. Makes 3-4 large waffles. Aeble skivers 2 eggs, separated 1 1/2 cup BUTTERMILK PANCAKE AND WAFFLE MIX Recipe found here for mix http://www.mylot.com/w/discussions/589439.aspx 1/4 teaspoon ground cardamom (if desired) 1 cup water 2 tablespoon melted butter Butter for frying Powdered sugar, for garnish if desired In a medium bowl, beat egg yolks until pale. Stir in BUTTERMILK PANCAKE AND WAFFLE MIX, cardamom (if desired) water and 2 Tablespoons melted butter until blended. In a medium bowl, beat egg whites until stiff but not dry. Fold into egg yolk mixture. Generously butter each muffin tin Bake in oven at 400 degrees for 15 - 20 minutes or until lightly browned and a wooden pick inserted in center comes out clean. Dust with powdered sugar for garnish. Serve warm.

This sounds great! I am going to have to send you the Master Mix recipe that Perdue University developed. I use it as a Tupperware hand-out because it makes such a large quantity of "biscuick" type mix that you can have on hand for making biscuits, cookies, gingerbread, coffee cake, pancakes, etc. I will try to get it out to you as soon as possible (like when I find your address!) ~Donna

DId this recipe get out yet and I missed it? I will try it with some whole wheat flour an see how it works. I ahve always wondered why the bisquick peope dont use whole wheat flour and make it stuff even healthier.

You will love the taste of the waffles and pancakes. They are so light and fluffy.
