Quadrettini casserole

Here is a casserole that we really love. I never make it the same way twice.
1/4 cup butter
1/4 cup salad oil
1/2 cup chopped carrot
1/2 cup chopped onion
1 cup chopped celery
2 cloves garlic, crushed
1 pound ground beef
1 can (6 oz.) tomato paste
3 cups chopped, peeled fresh tomatoes
2 teaspoon salt
1 1/2 teaspoon oregano
1 teaspoon basil
1/2 teaspoon thyme
2 cups uncooked noodles
1 package ( 10 oz.) frozen chopped spinach
1/2 cup grated parmesan cheese
In large saucepan melt butter and add oil. Add carrot, onion, celery and garlic; cook till tender. Add beef and cook, stirring with fork till browned. Add tomato paste, tomatoes, salt, oregano, basil, thyme. Simmer uncovered for 1 1/2 hours.
Cook noodles according to package directions. Drain and rinse with cold water.
Cook spinach and drain well. Add noodles and spinach to sauce.
Turn into a 2 quart casserole dish. Sprinkle with cheese and bake in a 350F oven for 20 minutes till heated through.
Serves 4-6

this looks delicious and my hubby is a great noodle lover...thanks a million i will put it in my nrecipe folder..i am an avid food buff myself..

This is good, especially in the winter. I usually double the recipe and freeze the rest. It takes awhile to make it but it sure is worth it. Let me know if you like it.
