Sweet potato croquettes

1 pt. mashed sweet potatoes
1 tblsp. butter
1 tsp. salt
1 tblsp. sugar
1 egg white
bread crumbs
Mash sweet potatoes very fine and add salt, sugar, and melted butter. Shape into croquette rolls or patties and chill in the refrig. for half an hour. Then roll in bread crumbs, dip in the egg white, slightly beaten, and into the crumbs again. Bake in a shallow, greased baking dish for 20 minutes, in 400*.
An option:
Place a marchmallow in the center of each with the potoato mixture coating it completely.

I cant get enough sweet potatoes or yams (my son-in-law makes a great casserole) now I'm going to try the croquettes. Maybe put just a little cinnamon in them.

Ohhh, margie, this looks awesome! I love sweet potatos and I am always looking for new sweet potato recipes. (I even had a discussion post about needing new sweet potato recipes when I first joined myLot!!) Thanks so much!!
