I love muffins. They are so simple yet so filling. I also love fruit of any kind so to combine apples in a muffin is wonderful. These days you can purchase a mix for just about anything but what is in those commercial mixes? Often, I cannot even pronounce the ingredients. That couldnt be good. I love to make my own mixes and keep them on hand so I am not tempted to purchase those costly commercial ones. This recipe calls for dried apples in the mix. If you dont have dried apples, just eliminate it and add the apples to the instructions. Do not forget to add diced apples if you do not add the dried ones. Have fun while making this. It can be stored in a ziploc bag or any other airtight container. This makes a great gift idea for loved ones or the elderly. Remember to check on people this cold winter season. APPLE MUFFIN MIX Apple Muffin Mix 2 cups self-rising flour 1/2 cup sugar 1/4 cup brown sugar 1 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1 cup dried chopped apples Combine all ingredients and store in an airtight container (1 gallon ziplock bag workds great). Dont forget to Attach the instructions.: Apple Muffins 1 package apple muffin mix 1 egg 3/4 cup milk 1/4 cup oil Preheat oven to 400. Mix all ingredients just until moistened. Fill greased muffin cups 3/4 full. Bake 15-18 minutes, or until golden brown.
