here are some recipes for you
Baked Fish Recipe - Quick Fish Au Gratin
INGREDIENTS:
1 1/2 to 2 pound fish fillets (orange roughy, catfish, haddock, etc.)
1 can cream of mushroom soup or cream of celery soup
1/4 cup milk
1/4 to 1/2 cup grated cheese
1 1/2 cups soft bread crumbs tossed with 3 tablespoons melted butter
PREPARATION:
Heat oven to 400°. Butter a shallow baking dish.
Arrange fish in prepared baking dish. Combine soup with milk in a saucepan over medium low heat and heat through. Pour soup mixture over fish. Sprinkle with grated cheese and buttered bread crumbs.
Bake for 10 to 15 minutes, or until golden on top and fish is flaky and cooked through
here is another recipe
Baked Stuffed Fish
INGREDIENTS:
1 1/2 to 2 pounds fish fillets
salt
3 tablespoons finely chopped onion
1/2 cup finely chopped celery
6 tablespoons melted butter
1 teaspoon salt
1/8 teaspoon ground pepper
1 teaspoon dried leaf sage, crumbled
4 cups dry bread, cut or torn into 1/4-inch pieces
butter
chopped parsley
lemon wedges, optional
PREPARATION:
Cut fish into strips. Line well-greased muffin tins with fish strips; sprinkle with salt. In a small skillet, saute onion and celery in butter until just tender. Combine vegetable butter mixture with 1 teaspoon salt, pepper, sage, and bread cubes.
Add a little hot water if stuffing seems too dry. Dot the top of each stuffing center with a little butter then sprinkle with chopped parsley. Bake at 350° for 30 minutes, or until fish flakes easily with a fork. Serve with lemon wedges, if desired.
Serves 6.

Pan-Fried Fish
INGREDIENTS:
2 pounds fresh or frozen thawed fish fillets
2 tablespoons steak sauce
1 1/4 teaspoons salt
pepper
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1/4 cup cooking oil
PREPARATION:
Mix cornmeal and flour together. Rub fish fillets all over with salt, pepper, and the steak sauce. Roll in the flour and cornmeal mixture. Heat oil in skillet until very hot, about 370°. Brown fillets for about 2 minutes on each side.
Reduce heat to low. Cover and cook for about 4 to 6 minutes longer, depending on thickness of fish. Fish should flake easily with a fork. Serve with lemon wedges and tartar sauce, if desired.

One of my favorite fish dishes is a really simple marinated salmon. All you do is take a salmon fillet and marinade it (preferably 3 or more hours) in some soy sauce, extra vigin olive oil, and fresh lemon. Then you bake it in the oven until the fish is done. You can check to see if it is done by seeing int he fish flakes off when you use a fork. I know it sounds too simplistic to be good, but I just love it. Also it's really easy and I usually have those ingredients in the house so theonly thing I have to go out and buy is the salmon.

Here is the simple fish fry:

Choose Fish fillets any variety like solmon,catfish,tilapia... marinate that in the mixture of lemon juice,salt,pepper for halfanhour .After in a sauce pan 2 to 3 tbsp of olive oil and fry until you see the golden color .
This is very good combination with cucumber+lettuce salad..

here's a my favorite fish recipe
2 cups self-rising flour
1 cup beer
Garlic powder, salt and pepper to taste
4 catfish fillets cut into strips
Vegetable oil for frying

Combine 1 cup flour, beer, garlic salt, salt and pepper in a bowl. Mix well. Dip catfish strips in remaining flour and then in batter. Fry in hot oil in a deep-fryer or skillet until golden brown. Drain on absorbent towels. Serve hot with your favorite sauce.

Grilled Fish Steaks

recipe yield: 2 servings
PREP TIME 10 Min
COOK TIME 10 Min
READY IN 1 Hr 30 Min

INGREDIENTS

1 clove garlic, minced
6 tablespoons olive oil
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
2 (6 ounce) fillets halibut

DIRECTIONS

1. In a stainless steel or glass bowl, combine garlic, olive oil, basil, salt, pepper, lemon juice, and parsley.
2. Place the halibut filets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.
3. Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.
4. Remove halibut filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done when easily flaked with a fork.

Trout Amandine

Prep 15 min. Cook 20 min. Ready In 35 min. Serves 2

Ingredients
2 whole (10 ounce) trout, pan-dressed
salt and pepper to taste
1/4 cup all-purpose flour
4 tablespoons butter
1/2 cup blanched slivered almonds
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley, for garnish
8 slices lemon, for garnish
Cooking Instructions
Rinse and pat dry trout. Season inside and out with salt and pepper to taste. Dredge trout in flour.

Heat 2 tablespoons butter in large skillet over high heat until melted. Add trout and brown both sides. Lower heat to medium and cook for about 5 minutes on each side or until cooked through. Remove trout to a serving plate and keep warm.

Wipe out pan and add 2 tablespoons butter. Cook butter over medium heat until it just begins to brown. Add the almonds and brown.

Pour sauce and almonds over fish and sprinkle with lemon juice and parsley. Garnish with fresh lemon slices.

Almond-Crusted Salmon

Ingredients

2 Tablespoons vegetable oil
2 cups sliced almonds
2 large eggs
3 10-oz. salmon fillets (about 1 inch thick), each sliced in half horizontally
3/4 cup fresh lemon juice
4 tablespoons capers
6 tablespoons (3/4 stick) butter, chilled
6 lemon slices
Chopped fresh parsley


Preheat oven to 200°.

Heat oil in heavy large skillet over medium heat. Place almonds in shallow baking dish. Beat eggs to blend in medium bowl. Dip salmon into eggs, turning to coat; dip salmon into almonds, turning to coat and pressing firmly so that almonds adhere.


Place salmon in skillet and cook until opaque in center, turning once, about 5 minutes. Transfer salmon to rimmed baking sheet; keep warm in oven.

Add lemon juice and capers to skillet. Increase heat to medium-high; boil until reduced slightly, 1 minute. Add butter, whisking just until melted. Transfer each salmon half to plate. Top with sauce. Garnish with lemon slice and parsley.


Makes 6 servings.
