a disturbing trend in background music

when the "fight" scene features an Italian kicking and beating someone who is close to death or dead, the music sounds like a choir of angels. when scenes of violence depict mafia type men killing each other, the music is all the sound- no cries of anguish no sounds of crushing bones, which are evident in irish battles, English, in fact anybody else. what weird message is it that the operatic choir begins with a lead soprana the minute a made guy makes a fist?? Can't figure this one out. can you help?
