I want to learn to make cheese, can anyone help?

I have made butter, but making cheese would be new to me other than being on a tour of a cheese factory. What does the absoloute novice need to get started?

We make a few types of cheese and for your very first experiment why not make a smooth soft cheese based on yogurt? All you need is a big carton of plain yogurt, some oil, salt and a clean cloth. Scald the cloth (everything you use in cheesemaking needs to be ultra clean) and tip the yogurt onto it. Tie the ends to give you a bundle of yogurt and put this in a colander in a bowl overnight (in the fridge if your kitchen gets warm) Open the cloth, stirt and scrape the soft cheese to a smooth mass and hang it again for a few hours until you have the consistency of Philidelphia. Scrape and stir again adding a small sprinkle of salt and a drizzle of oil. Shape this into a round or scoop it into a bowl and serve with bagels, toast, scones or whatever. Its quick, yummy and is a great way to make a simple cheese with no unusual supplies.

Hey, thanks! Is this something that chives and that sor of thing could be added to? I would ask how long it keeps but I think it would be eaten fairly fast around here!

The Ballymaloe Cooking school has a three day course. I thinkit is taught by Darina Allen or her daughter. Taste of Dublin is coming up in June, if you manage to get tickets you could probably get all the information there.
