I do not give my daugher chocolate for easter. Her grandmom fixes her a lovely basket with candy and usually a phone card for her cell phone. I usually fix her a basket with a few books and maybe a movie. She also gets a gift card for starbucks. We has had this tradition since Heather was about six or so. I try to watch how much junk food she eats. The best part is that Heather has been a big reader since she was very young. One year for Easter she got three pairs of jeans and six new shirts. That made her happier than if I had give her ten pounds of chocolate. I think if you start when they are young doing special things toys, books, movies, etc. in place of the candy they will not feel like they are missing any thing.

It's my daughter's 1st Easter this year & we've already told everyone, 1 egg is sufficient :)
We're getting her a beanie kid dressed as a rabbit & a Pooh character basket. Probably a new outfit as well or something like that.
My parents are getting her 1 rabbit chocolate, & a big rabbit soft toy, my partners parents are getting her a toy & an outfit.
Little ones seem to be happy with anything, we usually get nieces a toy & an egg, or an outfit & egg.
So get her something she likes, has seen that she's wanted or maybe just something she needs!

When my children were little Easter Bunny always used to bring a new dressing gown and slippers. I would tuck some small easter eggs inside the slippers as well as leave a trail around the house with little eggs. The kids loved it and they got something they needed as well.
