Healthy and vegetarian friendly food...

This is not about bugs or eggs, don't worry.(^^,LOL) As I have been typing my egg post before, I have wonder too about vegetarians friends. If they would like my post or not. And happily, still, many of them, replied or commented on it. I'm so thankful. So as the result of it, I've searched in my collections of recipes and books. Yah, one of my hobbies to copy, paste, and cut recipes. I've found some vegetarian friendly but yet delicious and easy recipe to do.
But I must admit; I got some dilemmas about wich one was more appropriate. And from many, I choose only two. Because I know some are vegetarians, vegans, lacto-ovo-vegetarians and others. My parents have Australian friends who are vegetarians, but I never dared to ask them about it. And when we visited them before; they added some pieces of chicken to their veggies for us. But they didn't ate them. It was for us, especially we were still kids back then.
May I ask some quesions? What are the restrictions to each different kind of being a vegetarian? Is beef or chicken cube/bouillon prohibited? How about anchovies? Some recipes use a small amout of them especially in pasta. How about fish and seafoods? And pasta?
Anyway, I have choosen only two which are easy to prepare and vegetarian friendly to all. And they are great too for figure conscious persons. I hope you'll like them.
No.1 Recipe: Tofu Cream Salad (serves 6)
Ingredients: 1/2 cup sweetened "macapuno" or coconut meat. 1 cup all purpose cream or whip cream,1/2 cup diced cheddar cheese, 1/2 cup cheese, 1 cup diced honeydew melon, 1-1/2 cups japanese "tofu", cut into cubes, grated cheese, lettuce leaves.
Procedure: Combine the fist five ingredients and mix well. Top with tofu and grated cheese. Chill. Serve on a bed of lettuce.
No.2 Recipe: "Antipasto di Melanzane" or Eggplant appetizer.
Ingredients: 2 large eggplant, 1 cup oil, 1/4 cup oil (extra), 3 ripe tomatoes, 3 cloves garlic, 1 tablespoon tomato paste, 1/2 cup water, salt, pepper.
Procedure: 1. Cut washed, unpeeled eggplant lengthwise into 5mm (1/4in) slices. Cut slices into 6cm (2.5in) lengths.
2. Heat oil in frying pan, add half eggplant to pan, cook 5 mins or until eggplant is soft. Remove from pan with slotted spoon, repeat with remaining eggplant.
3. Heat extra oil in frying pan, add peeled and crushed garlic, peeled, seeded and chopped tomatoes, tomato paste and water; cook uncovered 10 mins or until sauce is thick. add eggplant, salt and pepper to sauce, stir lightly to combine. Spoon onto serving plate; serve hot or cold. Great too with pasta and rice.

I am a non-vegetarian and eat everything from egg to chicken,fish to seafood but I don't eat bugs,lol.You sure have a way of presenting recipes.I wish I could cook them,lol.Ah I want to have a pasta now but all restaurants over here must be still close.:-P

It is so sweet of you to post vegetarian recipes,Aphrodeitei!I just bookmarked your post before responding.We are vegetarians.meaning we eat milk and milk products like cheese as opposed to vegans.My husband however does not eat eggs.I eat eggs,so does my daughter.Generally in India where most are vegetarians,people donot eat egg and any other meat products.but they consume milk,butter,cheese etc.there is no religious restriction on eating milk products.I guess that is because it does not involve killing an animal.(I apologise if I offend anyone here,that is not my aim:))
We avoid chicken and other non-vegetarian flavourings too.Anchovy is a kind of fish,(correct me if I am wrong) do even that is a no no.I do prepare pasta dishes at home but leave out the anchovies.since I have never tasted it,I would not know the difference.Beef is a strict no for us because we worship the cow as a divine being.But these days,there are many people who being vegetarians,eat eggs.I don't even cook non vegetarian in my house simply because we have never had it before.And don't intend to either,just my choice:).

And yes, you are right, anchovies are small salted fishes, sometimes powderized or flaked to add some tangy flavor to pastas especially. But not all pastas have them. Happy cooking! thanks darling, so you are inspired by vegetarians like me----hee-----just joking, well i dont eat either meat or eggs. in India there is a large variety of food available, vegetables, pulses, rice and chappatis (made from kneaded wheat flour) is the most common food eaten, so never even encountered problem by being vegetartian, and yeah thanks for those receipes, i hope i will try them. thanks again

I am Eggitarian, a vegetarian who eats Eggs only. I do not avoid egg in the non-vegetarian section. everything else I do not eat that includes anything like anchovies, seafood etc etc. I was an avid meateater more than a decade ago I stopped eating meat. But I do cook everything be it fish or lobster, chicken or meat. I do not taste the food just cook it! My husband is an avid meat eater.
Yes I also avoid chicken/beef bullion too. Infact I always ask the waiter/waitress before I order if anything (like rice/ noodles) has been cooked in chicken broth or with bullion cubes if they yes then I do not order that item from the menu. This is also the reason why I avoid eating outside a lot. 'cos the choices are few and mostly limited to eating Italian or a salad.
If I go to friend's place for a meal I tell them to just toss a salad and not to cook anything special for me. Since I am most certainly the only nutcase in the whole group. Thanks for the nice recipes.
Here is a simple snack that you could try:
Remove corn from the cob from 4 ears of corn, Then in a pan add Half a tablspoon of butter and while it is melting put the corn into the pan and toss for about 3-4 minutes on a medium-high flame. Add some salt and a dash of lemon juice to it. If you want you could add some hot pepper flakes too. Remove and serve in bowls. It tastes awesome the sweetness of corn with the butter and lemon makes it a delicious combination. the little salt enhances the sweetness in the corn.

As you rightly pointed out, there are many kinds of vegetarians. Some vegetarians eat eggs, some do not. Some take garlic, some do not. Some eat only vegetables, some eat just the mock glutton. Fish, meat and seafood are definite out of bounds but mock chicken, fish, and meat are acceptable. Some vegetarians eat only from vegetarian stalls, some eat from non-vegetarian stalls. They only eat the vegetables and put the 'untouchables' aside. For a vegetarian meal, it is safe to cook pure vegetables without eggs and spices. Introduce other stuff as sides.
As for recipes, thanks. It come in useful if I should cook :P

One of the easiest and healthiest dishes is rice and vegetables.Cook the rice foll owing the instruction on the packet.Boil some frozen mixed veges.
Poach a nice piece smoked firm fish in milk and when flaky remove from fry pan, reserving the milk
Melt some butter in the pan some plain white flour and cook out until it is cooked out, then return the milk gradually at first stirring it in to make a nice smooth sauce.
Flake the fish and return to pan.
To serve mix rice and veges together and plate up. If you want to make it look really flashy, pack the rice into a small bowl and then invert it onto the centre of the plate. Carefully remove the bowl, and you should have a nice mountain in the middle of the plate. Spoon out the fish and around the rice and you have a nice looking meal which is good for you and cheap to make.

Wow! that recipe you posted looks delicious. I will try it later when I have the time to cook. You have a lot of questions. What i can suggest is you get a book regarding nutrition.It is all written there regarding the advisable amount to take on carbohydartes, proteins and fats.Nutrition books also teaches on what food to take and what kind of dietary nutrients we get in the food we eat. If you dont have time to read or buy the book, just remeber the food pyramid, More on carbohydrates, moderate on protien foods aND LESS on salty and fatty foods. Goodluck!
