Curry with Fresh Green Leaves (Amaranth Red) for my Lunch

Searched thoroughly to prepare something for lunch. The fridge is empty. There are no veggies. There in the corner, I found some fresh green leaves. I kept them neatly in a polythene cover. So this must be my dish for lunch....

This is one of the best and quickest item that can be prepared in just 5 minutes. It will be great in taste. I could experience and recollect the taste of this dish during my recent visit to Nellore in Andhra Pradesh, India....
