I have 3 knives.One is high carbon steel with a logo Mundail, one is Precision hollow ground fine stainless steel and then a Washington forge at Yorktown stainless steel. What I'm going to do is sharpen them but I want to know...

RonRay Oh yeah... Try to keep your knives at approximately a 15 to 18 degree angle to the sharpening stone. (Thinner blades require lower angles; 12 to 15 degrees. Think of a "V".)

RonRay Hi! Your Precision Hollow Ground and Mundail knives will have the higher content of "carbon", making them your best knives to 'maintain' an edge. However, it will not be the easiest to sharpen. There is a simple rule to remember: If the knife is real easy...
