Anna @porwest - I think it's just a matter of habit not to have eggs in the evening for supper. We never have eggs for breakfast, but I often make eggs for lunch.

Jim Bauer We don't eat breakfast at breakfast time, so it is either had for a lunch or a dinner for us. It makes for a cheap dinner meal so long as the eggs are beefed up to make it a heartier dish. But I love eggs any time of the day, really.

Anna I never serve eggs for dinner, but I like scrambled eggs for lunch. I usually add chopped ham and shredded provolone cheese and chopped onion. I also like a Spanish omelette for a change, eggs, potatoes and onions.
