Princeworthy's Chicken and Dumplings (Budget Friendly and Easy!)

Princeworthy's Chicken and Dumplings 2-3 pounds chicken (on the bone is best but any kind will work) 6 cups water 1 carrot cut into bite size 1 onion diced 1 stalk of celery chopped 1 teaspoon salt or to your taste 1/4 teaspoon freshly ground pepper or to your taste Dumplings 1 package of Jiffy buttermilk biscuit mix prepared Place the chicken in a large pot*, and add the water, carrot, onion, celery and salt. Bring to a boil, cover and lower heat. Simmer for an hour and a half to two hours or until tender and chicken is done. Remove chicken and allow it to cool enough to handle. Reserve the broth. Remove all the bones from the chicken, discarding all skin, bones and cartilage, and tear meat into bite-size pieces. Set aside. (You can do this part the day before, if you like. Just refrigerate the chicken and broth.) If you do refrigerate the chicken and broth make sure to heat it to boiling before proceding to the dumpling part. Add the chicken meat to the broth and veggies and allow it to heat up to boiling. While it is heating add the water to the Jiffy buscuit mix and mix well. When the broth is boiling add small strips, clumps, balls or whatever way pleases you of the dough in to the boiling mixture until it is all used up. Let it boil for about 10 mins to make sure all the dumplings are cooked through, you might need to stir it but be careful not to break up the dumplings. Add your pepper and more salt if desired and serve! Enjoy! *If you would like you can do the chicken and veggies in a crock pot and when you get home finish the recipe. I think that the only thing needed for the Jiffy mix is water but I am not for sure because I don't have any on hand right now. I wish I did though I would make this for dinner :) The more times you make this the easier it gets and you can learn to adjust the water amounts to your desired thickness. I love to make this because it is so cheap to make it only costs about 35 cents for the Jiffy mix and the chicken is cheap if you get it on the bone and it turns out best that way. Another reason I love this is you can even start from frozen chicken. I hope that you like it!

This sounds wonderful to me, and I would have liked someone to have served me some when I had a sore throat, and a sick tummy, and a fever and a headache over the last few weeks. The carrot makes a pretty color touch. I am going to have to talk hard to get my husband to believe he might like dumplings. He would rather I just make the biscuits and serve them to him. LOL I remember grandma making chicken and dumplings, rabbit and dumplings, squirrel and dumplings. . .

I remember my grandma making chicken and dumplings too and rabbit stew. I have modified it to make it easier though :)
