I make my own TV dinners with some of my leftovers. Leftover pork I will put in a pot of beans. You could also stir-fry the pork and vegs. That won't help with the smashed taters. Sorry. :(

I hadn't thought of tv dinners. They have all those new storage trays out these days. Thanks will keep this in mind. we have 5 in our house, and it can be hectic at times.

If you cant' find the trays, you can use foil. I put my foil-wrapped dinners in a freezer bag for good measure. It is a great time saver. And no more wasted $$ having to throw food away! :)

Leftovers are fun because you can create new dishes. I just let my imagination run wild, and have fun with it. Whatever you can think of. Go for it, Ya never know it could be a new "keeper" recipe you have created.

I'm single at present and I eat a lot of leftovers that are very much the same, but fortunately I don't get bored with them. I used to make my own version of a salmon loaf on Sun. and then have it the rest of the week. But I got tired of the preparation and since I use canned salmon anyway, now I just make a sort of salmon salad but I only mix it with Light Miracle Whip and since it is just me that is enough for 6 meals. For your leftovers you can mix a little milk with your mashed potatoes, form patties and fry them for one idea. I like the taste of mashed potatoes with steak, so although I haven't tried this you could try cutting the pork into bite size pieces and mixing it with the mashed potatoes and heating the mixture and serving it as a dish. Cut the carrots up and add some peas to get peas and carrots which I think is a good mixture. I hope these ideas will give you something to think about.
