first i tenderize the meat wit a tenderizer or jam with a fork a few hundred times i set it on the grill for a couple of minutes and tenderize the other side and then i put my favorite seasonings on it combined with a rich and flavorful habanero hot sauce and giving it another 5 minutes (i like mine rare) (u could use a rich bar-b-q sauce as well) and then its on the plate sprinkle a little more garlic salt/seasoning and add some ranch dressing on the side. hope that works for ya; my friends love it!!!

here are my favorite recipes of steaks from allrecipes.com Caribbean Beef Loin Steaks SUBMITTED BY: rosidaisy "These steaks are flavored with a Caribbean-style marinade." INGREDIENTS * 1 fluid ounce coconut-flavored rum * 1/4 teaspoon salt * 1/4 teaspoon ground black pepper * 1/8 teaspoon ground cinnamon * 1/2 teaspoon garlic powder * 1/2 teaspoon dried oregano * 1/4 teaspoon dried sage * 1/2 teaspoon white vinegar * 1 tablespoon fresh lemon juice * 4 slices onion * 6 (8 ounce) beef top sirloin steaks * 1 tablespoon olive oil DIRECTIONS 1. Whisk together the rum, salt, pepper, cinnamon, powder, oregano, sage, vinegar, and lemon juice in a bowl; pour into a gallon-sized, resealable plastic bag. Add the onion and steaks to the marinade. Seal the bag, squeezing out as much air as possible. Allow to marinate in refrigerator 2 1/2 hours. 2. Heat the olive oil in a large skillet over medium heat. Cook the steaks with the skillet covered to desired doneness, about 3 minutes per side for medium rare. --------------------------- Perfect Flat Iron Steak SUBMITTED BY: Cocina JNOTS PHOTO BY: sweetiesmj "This recipe was created from a combination of different recipes that I read when I was looking for the perfect iron steak. I combined, adjusted, and finally perfected it to my taste. I'm sure you will love it as well. After all it is perfection." INGREDIENTS * 2 pounds flat iron steak * 2 1/2 tablespoons olive oil * 2 cloves garlic, minced * 1 teaspoon chopped fresh parsley * 1/4 teaspoon chopped fresh rosemary * 1/2 teaspoon chopped fresh chives * 1/4 cup Cabernet Sauvignon * 1/2 teaspoon salt * 3/4 teaspoon ground black pepper * 1/4 cup dry mustard powder DIRECTIONS 1. Place the steak inside of a large resealable bag. In a small bowl, stir together the olive oil, garlic, parsley, rosemary, chives, Cabernet, salt, pepper and mustard powder. Pour over the steak in the bag. Press out as much air as you can and seal the bag. Marinate in the refrigerator for 2 to 3 hours. 2. Heat a nonstick skillet over medium-high heat. Fry the steak in the hot skillet for 3 to 4 minutes on each side, or to your desired degree of doneness. Discard the marinade. These steaks taste best at medium rare. Allow them to rest for about 5 minutes before serving.

my favourite way that mum used to cook our steak and i still do, is under the grill with seeded mustard on it....cooked medium rare... served with veggies or salad.. sometimes i just cook a piece of steak in the pan with some spices on top and make a steak sandwich with cheese and sauce and onions...yummo
