please share with me your recipes of muffins

hello to all mylot members out there. one of my favorite snacks is muffins. i really miss to eat freshly made muffins. can you give me some of your unique recipes of muffins? what's your secret for having excellent muffins? please share. thanks in advance

My favorite muffin is blueberry muffin.I always bake one when my family is on a picnic.Here's the recipe. Blueberry Muffins 1/2 cup butter 1 cup sugar 3 eggs 3/4 cup sour milk 2 cups all-purpose flour 1 tsp baking powder 1 tsp salt 1 tsp cinnamon 1 1/2 cup fresh/frozen/canned blueberries 1/4 tsp nutmeg Sift the flour,baking powder,salt,cinammon and nutmeg. Cream butter and sugar until fluffy.Add eggs and mix well.Add the dry ingredients alternately with the milk and blueberries.Blend thoroughly the mixture until smooth and free from lumps.Fill 2/3 of the mixture into gresed muffin pans.Bake in a preheated oven for about 20 minutes or until lightly browned.Makes 10-12 muffins.

This is the only muffin recipe which is in english my list. The rest if in Malay so I am sure you can't understand Malay, better not to post it for you. MORNING GLORY MUFFIN Ingredients: 2 cups all purpose flour 3/4 cup brown sugar (Originally used 1 1/4 cups of white sugar) 2 teaspn baking soda 2 teaspn ground cinnamon 1/4 teaspn salt 2 cups shredded carrots 1/2 cup raisins 1/2 cup chooped walnuts 1/2 cup dessicated coconut (Originally used unsweetened flaked coconut) 3/4 cup canned lychee, chopped and drain the syrup (Originally used 1 apple) 3 eggs 1 cup vegetable oil 2 teaspn vanilla essence Method : 1. Pre-heat oven to 175 degree cels. Prepare 12 muffin paper cups. 2. In a large bowl, sift together flour, sugar, baking soda, cinnamon and salt. Stir in the carrot, raisins, walnuts, coconuts and lychee. 3. In a seperate bowl, beat together eggs, oil and vanilla essence. Stir in egg mixture into flour mixture and mix just until moistened. 4. Scoop batter into prepared muffin cups. 5. Bake for 20mins to 30 mins depends on your size of muffin cups, until a toothpick inserted into a muffin comes out clean.

i add some bananas and strawberries to my muffin mix. then when they come out of the oven, i drizzle chocolate on the top and grab some milk and enjoy
