GROUPER PARMESAN 2 lbs. grouper fillets, fresh or frozen 1 c. light sour cream 1/4 c. Parmesan cheese 1 tbsp. fresh lemon juice 1 tbsp. grated onion 1/2 tsp. salt 1/8 tsp. liquid hot pepper sauce Paprika Chopped fresh parsley for garnish Thaw fish if frozen. Cut fish into serving-size portions. Place fish in a single layer in a well-greased baking dish, 12 x 8 x 2 inches. Combine remaining ingredients except paprika and parsley. Spread sour cream mixture over fish. Sprinkle with paprika. Bake at 350 degrees for 25 to 30 minutes or until fish flakes easily when tested with a fork. Garnish with parsley. Makes 6 servings. GREEK GRILLED GROUPER 2 grouper filet Greek seasoning (powder kind found in spices) 1 small can stewed tomatoes (with garlic variety) 1 small can chopped black olives Place fish filet in oil-sprayed (Pam) foil pan. Coat with Greek powder seasoning. Spread stewed tomatoes on top of fish filet. Sprinkle with Greek seasoning again. Top with chopped black olives. Lightly sprinkle with Greek seasoning again. (DO NOT SALT) Cover with foil and seal around sides of pan. Put pan on hot grill. Cook on medium head for about 45 minutes to 1 hour depending on thickness of fish filets. You may squeeze lemon juice on top after cooking if you desire a more tart tasting fish. This can be done with any kind of fish. Shark is excellent! GRILLED GROUPER Fresh grouper 1 jar country Dijon mustard Coat grouper with mustard and marinate 2 hours in refrigerator. Place on hot grill and cook until done turning once during cooking.

Hey! Grouper is a good whitefish U can do almost anything with, cuz it'll hold up to most anything U do 2 it... part of a good whitefish is it absorbs whatever U put around it... Personally, I like a marinade of Soy, Ginger & Garlic, Honey & Lemon (fresh of course) overnight if possible, the lemon will cook the fish like a ceviche', so wait till mornin' B4 adding it... Use the juice & the Zest from the same lemon... Lime is a nice change sometimes... Here's a new 1 2 try, Texas Red Grapefruit... Then the grill... or a hot iron skillet if it's cold outside...really U can do anything w/grouper... Add shrimp to UR sauce...Use UR 'magination... Some grilled veggies...(Carrots & orange juice...balsamic vinegar)... Or how 'bout black bean/corn/tomato/jalapeno/pineapple relish?... The grouper won't mind... Juss tryin tah hep... AC
