my son was born in poland and my wife and i are southafricans, does that make my son a polish citizen?

I know that that is how it works in the United State. If you are born here then you are a citizen. i don't know about any other country.

yes it does... but if you and your wife aren't citizens of Poland then he has dual citizenship

Depends on Poland's laws. Not all countries give automatic citizenship upon birth. I'm told that the US gives automatic citizenship but does not allow dual citizenship.
