Yes you can, I have done it many, many times. It takes a little longer, some cake mixes have instructions for hand mixing on the box. You should mix 2 min. with a mixer, so you should mix for about 6-8 min. by hand. It will be just fine.

Yep, if you look at the cake mix, it might have directions for handmixing. Usually they say, "beat 50 times, until well-mixed". Anything more will be useless, so don't overbeat it. It'll work out just fine!
