Anyone doing anything special for Cinco De Mayo?

I didn't do anything special. I had thought about doing something special for dinner tonight, but I just didn't feel like it once dinner time rolled around.

I'm not doing anything speacial other than work online. I am getting ready to go outside for a while though and get some things done in my yard. It is pretty much just another day for me here. It is so pretty out though and I am going to go outside for a bit. We cooked out some hamburgers and hot dogs earlier though.

Its just going to be another day for us. My husband is Hispanic so we eat Mexican food all the time. A margarita sounds nice but its parents night at school so I better stay away from that! What are your plans?

I am currently attempting to make chicken enchiladas. The inside stuff tastes right. It is just a bit soupy. I love Mexican food. What a better way to enjoy Mexican food but to serve it on Cinco De Mayo? We are having Mexi-corn with the enchiladas.

It was just another day for me. I guess it could be as much of a cause for Celebration as St. Patrick's Day.
