Well, I wouldn't have a problem with cooking the rice and then topping with stewed tomatoes, carrots and corn. I would probably top with a little shredded cheese. I might add a bit of chicken if I had it. If not, I'd have it without chicken. That is making me hungry.

I put it all together in my rice cooker. I was just wondering what everyone else would do with that stuff also. Adding the chicken would have been a good idea, if I had any. Same with the cheese.

I would juice the stewed tomatoes. You can serve the carrots and corn as a mixed vegetable, then have the rice as the main dish. Do you have any seasonings, as this is going to be a bland meal. Also I like a little lemon squeezed over the chicken. If you are concerned about the tomato left from juicing you could put that on top of the chicken, as the chicken will be quite plain by itself.

I think I would just mix them together, make rice first then add the rest. Maybe add some ground turkey sausage. Yeah that sounds yummy!

Oh, I would probably sautee up some garlic and onion (add some celery too if I have it) and using the tomato as a base go ahead and make a soup. The carrots make me think of having a sort of stew - otherwise I would probably add such seasonings as to give the soup a mexican flair because of the corn... maybe even adding a little harina flour to thicken up a tad.

I would fried the rice with butter, I use fat free butter to cut the cals, it tastes like the real thing when its done, or you can use REAL butter if you like, after the rice is cooked I would add the tomatoes, carrots, and corn and a some cheese, your fav kind. I ate something like this before and it was pretty good. -Cherish

Me personally, I would put the carrots and corn back on the shelf and have rice and tomatoes. That is one of my favorite dishes.
