Quick tip to help keep your dairy fresh

I'm a big fan of sour cream. It goes great on everything, from bagels to tacos. But, I hate the way that it seperates and becomes runny after just a few days in the fridge. So, I found a couple really good ways to ensure freshness even longer. 1. Don't eat out of the sour cream container. Saliva contains a corrossive (digestive) enzyme that will start the decomposition of the sour cream. If you eat directly out of the container, your saliva will get onto the spoon and then into the product. 2. Smoothe out the top of the sour cream before closing the lid. This will keep the sour cream from getting runny. I hope these tips will help you keep your sour cream even fresher. Please share a tip for keeping sour cream or dairy fresh. Thanks!

If it separates, I've found that it only takes a quick whip to get it back together. You are quite correct on smoothing the surface to keep it from separating so much. I read the seal on my sourcream last time I opened it and finally decided to take its advice. Not directly related to sour cream, but I recently learned that sticking feta cheese in olive oil will help prolong its life. I'm trying it out, so we'll see if it's actually true. :)

Actually, I love that tip! I love feta cheese, too. I had no idea such a simple thing would be a money and time saver too. I have both items. Thanks!

I really like sour cream too. Your tips are great. The only one I have heard about is to turn container upside down until you get ready to open, but I have never tried this so dont know if it works or not

I even use sour cream in my scrambled eggs. It keeps them very moist. The thought of any one eating directly out of the container very disgusting and just plain gross. Try putting a piece of saran wrap down in the container to caver the sour cream.

To keep things fresh I make sure that the temp is low enough, the gasket on the door is good, and that there is room for air to circulate around the foods. You are correct about the saliva, that is one reason why people should not ever eat out of the container directly.

I never knew that with sour cream, but I'll try it. :] It separating always annoys me, too. x_x; Thanks for the tips, though.
