Chimichurri Sliders

Hello everyone,
My hubby is from South America and we eat a lot of food from South America - Argentina to be exact. Anyways, a new menu item I have implemented in our household is Chimichurri Sliders. Basically I have a George Foreman grill and cook mini burgers on it. Before making the burgers I usually make up a batch of Chimichurri - or else if I am in a hurry I buy some premade. Anyways, all I do it cook the burgers, and I buy some little prebaked dinner rolls, like Sunbeam rolls. I cut the rolls in half like a burger bun, put the burger patty on the bun, top with provolone or mozzarella cheese and then place a dollop of Chimichurri on top of the cheese or on the top bun. These disappear very quickly at home. Here is a recipe for the Chimichurri if you would like to try it:
Ingredients:
1 bunch flat leaf Italian parsley
8 garlic cloves, minced
3/4 cup extra virgin olive oil
1/4 cup red wine vinegar
1 teaspoon lemon juice
1 tablespoon diced red onion
1 tablespoon dried oregano
1 teaspoon dried basil
1 teaspoon black pepper
1/2 teaspoon salt
Chop/grind parsley in food processor until finely chopped.
Add remaining igredients and pulse until almost emulsified. You want a consistency like salsa.
Enjoy!
It is best to let your Chimichurri marinate for a few days to marry the flavors together. You can use the Chimichurri also as a meat marinade or to baste steaks while grilling.

I like this idea, it sounds really good, especially the part about the dinner roll, as I'm not a big eater. I will have to try making this Chimichurri.

It sounds delicious. I'm always in the mood to try something
differnt. I love tapas and I'm sure I would love to try these also. One thing that i really love is pupusas. You should try making those if you havent.

Thanks. By the way, what is a pupusa? I know what tapas are and love them too. Tapas as I'm sure you know are from Spain and my mother in law is from Spain. I just love them because everyone can a little bit of everything and sample so many different dishes. Anyways, do you have a recipe for pupusas?
