Omg! Brussels Sprouts do not look gross to me, and cooked correctly, they are simply delicious. They are one of our most favorite veggies, although one of the few that we enjoy which are not also delicious raw. They are just cute little cabbages, really. I do understand your viewpoint to some extent, though because it took me 2 years to get hubby to try a brussels sprout but then he loved them so much that now he wants them all of the time. If anyone has never seen this vegetable fresh on the stalk, here is a picture: http://seeds.thompson-morgan.com/pix/m/seeds/1/171.jpg

Until last week, I'd never had a raw squash before. Tastes kind of like cucumber. Very delicious. Very healthy too and good on salad.

I have never had any type of greens. I just have never had the desire to try them. Plus I don't really know how to cook them.

I have never tried okra...I have heard it is delicious but I have also heard it is slimey which is not a texture I enjoy. I have no idea how it is prepared either. I tend to stick to the same vegetables all the time zucchini, corn, green beans and broccoli...I guess I am stuck in a routine.

We are vegetarians and hence most of the vegetables that are grown in my state are not only touched, but used for cooking our variety of dishes.

Broccoli is best steamed just until it turns a bright green and taken from the heat before it gets soft and brown. Most mushrooms can be enjoyed chopped fresh in a salad, but we prefer them sauteed in butter (any kind of cooking oil will probably do if you don't have butter) You want to dry them first so that when they fry the outside gets brown and a little crunchy and the inside is moist and a bit soft. We have not yet tasted edible amaranth, but I did order a seed packet and planted it in our indoor garden about a week ago. It looks yummy, but the leaves are not big enough to harvest yet. I'm not sure whether people consider amaranth greens a vegetable or an herb. Whenever we learn of a "new" vegetable we try it.

I'm not sure if I have ever had swiss chard. It is used alot on the food network. I also am not sure if I've had kale. I'm pretty sure I've had mustard greens, because I live in the South and it is frequently on buffets down here. My neighbor gave me some once, but I never cooked them. Most vegs. are tasty when prepared correctly.
