Carrot baking

Does anyone know of any good easy baked goods dealing with carrots. I have a huge bag of shredded carrots and I am not too sure what to do with them.

You could make a couple of carrot cakes and freeze them. Then there is carrot souffle, carrot cookies, They sound good, carrot bars with orange juice. You can find every thing from carrot cookies to carrot burgers at http://allrecipes.com/Recipes/Fruits-and-Vegetables/Vegetables-A-M/Carrots/Search.aspx?WithTerm=carrots&Page=1 I got started looking and couldn't stop. there are so many things one can do with carrots. They all looked so good I want to go do some of them now.

lol who would think that there is soo many things you can make with carrots. Thanks for the ideas I will have to try some of them.

I think that sometimes we get into a rut with our cooking and forget to think out side the box. i hope you find something that you like when you do please let us know what you decide to fix.

ya thats true. I think I am going to make carrot cake cupcakes and then put the frosting on the inside before I back them. it sounds yummy.

Carrot Muffins 1 cup raisins 2 cups warm water 2 cups all-purpose flour 1 tablespoon baking powder 2 teaspoons baking soda 1 teaspoon salt 1 teaspoon ground cinnamon 4 eggs 1 cup vegetable oil 3/4 cup brown sugar 3 cups shredded carrots DIRECTIONS 1. Combine raisins and water in a small bowl. Let soak for 15 minutes. Drain raisins, discard water and set raisins aside. 2. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners. 3. In a large bowl, sift together flour, baking powder, baking soda, salt and cinnamon. In a separate bowl, combine eggs, oil and brown sugar; beat well. Combine egg mixture and flour mixture; mix just until moistened. Fold in carrots and drained raisins. Spoon into prepared muffin cups. 4. Bake in preheated oven for 20 to 30 minutes. Let cool for 30 minutes before frosting.
