What do I do with my zucchini?

We normally eat it sliced and fried, but I have quite a bit and would like to find some way to freeze or preserve it to use in the winter - does anyone have any suggestions?

I for one love stuffed zucchini. Make up some rice, tomatoes, onions, hamburger meat and spices. Mix that all together. Cut the zucchini in half long ways and take out seeds. Place in oven/BBQ for a while so that the inside gets tender. Place the mixture inside the zucchini and bake longer till its done. You can freeze this as well but not for a long period of time.

We called these Zucchini boats. I think you are right, they would freeze well.

I am not fond of zucchini, but zucchini bread is delicious you might want to to try it.

Yes, it is very good! I experimented tonight and put some in some beef stew I was making - I was short of potatoes and had about a half a zucchini left over from last night, so I chunked it up and put it in - it was very good, couldn't really tell the difference with it in there.

I know you can buy ready breaded zucchini in the store, so you should be able to do something with it. I always made sweet "pickle" relish of zucchini, and also grated it into two cup portions to make zucchini bread out of.

I might try breading some and laying it out on a cookie sheet to freeze and then bagging once it is frozen.

Hi Sweet Let it cool. Wrap first in wax paper then a layer of plastic wrap Then aluminin foil. Pop in the freezer. When you take it out to thaw totally unwrap it let it thaw at room temp while sitting on a rack. If you don't follow this it ends up soggy. I've spoiled alot but now freeze and enjoy alot of home made breads. Each must be handled differently. Yummy I have no zuccini this year can I have a loaf? xoxoxoxoxo

My mother likes to make zuchini bread. I'm sure there is alot of information about things you can do with zuchini online.

I've used it for zucchini bread before - it's pretty good. Several years ago, I ground some up and froze it and used to later for zucchini bread - since the texture of it doesn't really matter when it's baked into something like that.
