What type of cheese do you most like to use to make a grilled cheese sandwich?

My favorite cheese for grilled cheese sandwiches is Farmer's Cheese. But since I don't find it very often or when I do it is a really small amount or too expensive, I generally use colby cheese. I don't like using the American cheese slices or velveeta. I don't like velveeta unless it is used in some kind of mix. And I don't really consider the American slices as real cheese because it is processed cheese food and not the real thing. I like thick grilled cheese sandwiches so I cut the slices thick when I make my sandwiches. I have never thought about using the spicy cheeses. I wonder how smoked gouda would taste in a sandwich? Another one that is too expensive, but I love it.

I use either cheddar or Velveeta.

It all depends on what cheese I have in the house. I have made them with American cheese, Velveeta, Monterey Jack cheese, Provalone cheese, and mozzarella cheese before. My son prefers white cheese on his grilled cheese.

Good Ol' American cheese is the only way to go. I think i've made it with pepperjack before, but too spicy.. Yum Yum to plain ol' american sliced yum yum cheese. Lol, I never actually thought about others using anything different.
