We sometimes put soy sauce in the fried rice in leu of salt. My sister also puts Kikiam(processed meat), fish balls/squid balls, Chorizo de Bilbao, and the like in fried rice. I onced tried putting minced ginger to it and I sometimes add chopped onions. To anyone who also explore their kitchen quite crazy as we do, please share your fried rice recipe here.

i don't know why filipinos have to eat rice, but we do, and we love it! i mean i tried to avoid this commodity at one point in my life. instead of eating rice during main meals, i substituted it with bread or pasta, or corn, cassava, banana, whatever, as long as it wasn't rice! but i think it's already a craving embedded in our system, or something we filipinos are born with. for most of us, we simply can't live without this precious pearly grains...

To patzle88 Do your MIL eat white rice or otherwise, They say that empty calorie is not good for us. Since she is a diabetic and a fatty liver, I advice that you eat only brown or other unpolished rice. I dont know if this will work but you may try Amargoso(Ampalaya/Bitter melon) whatever that was called. In the philippines, Ampalaya is known to aid(no theraputic claims) the suffering from diabetis.

I have added bacon, tomatoes and veggies but to white rice, I guess that will be neat with fried rice too.

But have you tried frying it? together in a pan? That way you can add garlic. The aroma will be better. Try it!

hello my dear frined, i just love to eat rice and can have in all my meals. in the lunch i generally have boiled or simply steamed rice . my hubby loves fried rice lot so i steam rice. i keep a portion for myself and then fry his part as he likes. he is a non-vegetarian so when he fries it he mixes all what he wanna mix but when i do i do it with generally veggies. i love veggies . i take mix veg and cut them . first i fry onion, garlic ginger and green chillies and then i add any veg into it. my family loves simply fried rice with ginger and fried rice with garlic or fried rice with onion and tomatoes and green chillies. i maske lentil soup and then i serve this fried rice which is a little spicy with it and a bowl of yoghurt. i make rice pudding also . i very simple4 one and which is made quite often at my place is the one where i just boil the rice with milk and keep it on to simmer and keep on adding milk as it vaporizes and condenses fast. to it i then add powdered cardomom, chopped almonds, cashews, rasins and sugar of course. the more you add milk and let it simmer the more you have a creamier taste. the rice is alll super super boiled and mixed so finely that when you eat not a single rice can you feel in your mouth. it all just melts in the milk and all you feel is the creamy creamy feel of milk with rice and dry fruits. i just love this and make it very often as everyone loves to eat. as it is very simple to make i serve it as a sweet too when i have a party or a get together at my place. happy eating rice in all the forms and in all the meals. :-)

Wow! Your post is a feast to read. I award you the best response because of this. Anyway, I once tried adding ginger to it and I like the taste but my parents seems not happy with it. They think that Im only playing in the kitchen and we ought not playing there. If ever I will have my own house, I will repeat the same recipe that I prepare with ginger. As I observe, ginger is added to stews in my hometown so does the reaction of my parents are explained.

First of all I use to fry Onions, garlic, thinly sliced vehetables and meat (if you like can add eggs too) with margerine. Then add bit of Aji-No-Moto (Seasoning powder) and salt. Then mix the cooked rice and add onion leaves(sliced) and add little drops of seasomi oil. Try this and see, you'll notice the difference.

Do you add monosodium glutamate in your fried rice? Anyway, yes we sometimes add margarine and my sister loves more. As for me, I guess too much margarine is not good(healthwise).

Fried rice is special because we can put whatever we like when preparing it. In my place there's a lot variety of fried rice. Fried with egg, with mushroom, with salt fish, with meat, with chicken plus several types that include vegetables like cabbage, carrot and baby corn. Sometimes it also have it's gravy to eat together with the rice.

I also love fried rice. Although in our family, I grew up with the traditional garlic fried rice. But I do love fried rice with chunks of longganisa.

I also grew up having our fried rice with only garlic on it but as fast foods offers other fried rice recipes, I try to do the same and even make my own mix. Among the available in the market "chow fan" is the best.

for me, frying rice is really simple. just some garlic, eggs and rice will be enough. i'll fry the minced garlic till fragrant before adding the rice. i'll continue frying until the rice is kinda jumping. then i'll lower the fire before adding the beaten egg. i'll try to cover the rice with the eggs until you can't tell that eggs has been added. for flavour, i'll add a dash or two of thai fish sauce. that's good enough for me and my dad often ask for 'repeat performance'.

i sometimes cook fried rice especially when there are left over rice. in a deep pan (medium heat), i saute chopped garlic and onion. and then i put diced red bell pepper. this adds to flavor and aroma of the fried rice. and then i add oyster sauce to it (lower the heat because the oyster sauce might get burn). then add some ground pepper (black or white, whichever is available). add the rice. mix well and then add a pinch of salt and the seasoning mix (maggi or aji-ginisa). mix well again. you may also add left over hotdog (sliced) or other meat. i also put chopped cabbage when it is available to make it more healthy. another optional ingredient is the egg. beat the eggs in a separate bowl and pour it in the middle of the pan. mix until cooked. hope you like it. :)

If ever we put any liguid to it like oyster sauce, we put it after the rice is in the pan to avoid burning it. My sister minced bell pepper because she dont that to taste the strong flavor. Nice fried rice you have. I want to try that. Sometimes we use sesami oil because of the lovely smell(when heated) and somtimes a chili infused oil(hot-yahoong yahoo!).
