Do you have a really good skinless, bonelss chicken recipe?

In my family we eat a lot of chicken. I would love to hear from some myLotters what their favourite skinless, boneless chicken recipes are?
Here is one of my and my family's favourites:
Cooking Time: approximately 55 minutes
1/4 cup flour
1 envelope taco seasoning mix
6 chicken breast halves
1/4 cup butter
1/4 cup tortilla chips, crushed
2 tablespoons of onions chopped
1 tablespoon of butter or vegetable oil
2 tablespoons of flour
1 (13 oz)can evaporated milk * I just use regular milk
1 cup shredded Monterey Jack cheese * I just use old cheese sometimes
Preparation:
Combine 1/4 cup flour and taco seasoning mix in plastic food storage bag: add chicken, a piece at a time, and shake to coat chicken well. Melt butter in frying pan. Place chicken pieces in the frying pan, turning to coat surface with melted butter. Roll chicken pieces in crushed tortilla chips and place on cookie sheet that has foil placed on it. Bake at 375 degrees for 45 minutes. Meanwhile, cook onion in vegetable oil or butter until tender. Blend 2 tablespoons of flour and stir until flour is well blended. Add evaporated milk or 2% milk. Stir until mixture thickens and bubbles. Add cheese. Heat until cheese melts. Do not boil. Arrange chicken on platter and spoon cheese sauce over the chicken.

It is really good recipe. Just a little bit fiddly. So make sure you have a good amount of prep time especially the first time. After the first time it will make a lot more sense and be easier to make.

Oh it is good. It takes a bit of work but it is really worth it.

I'll give you the recipe to make chilli chicken.
Ingredients
500g boneless chicken, cut into small cubes
4 spring onions
1 capsicum
100g leeks (white part)
50ml cooking oil
1 pack of Knorr Chinese Chillie Recipe Mix
Preparation
Cut chicken into small pieces, Season with salt and pepper, Keep for 10 minutes. Deep fry till crispy.
Dice vegetables, panfry for 2 minutes. Add 300ml of water and entire contents of the Knorr Chilli pack. Bring to boil and simmer for 2 minutes.
Add chicken and cook for a further 1 minute or till sauce is thick. Serve hot.

That sounds good as well. I will have to find the Knor Chillit pack in the grocery store.
