What do you do when your entree is too salty?

Recently my daughter bought a make it yourself gumbo kit. When we followed the directions, we were disappointed that it wasn't well seasoned. Both my daughter and hubby said it was too sweet and really needed some seasonings. Maybe we're just used to Louisiana gumbo which is a little on the spicy side but we definately were not impressed with the package mix fixed according to the recipe.
Because I hated to see that much food go to waste I decided to add some seasonings to improve the flavor. Unfortunately, I added too much salt and while better than the bland taste of the original, it really wasn't something I wanted to get them to try.
After doing a little research, I added some large chunks of raw potato to help absorb the extra salt but it wasn't enough. I even added some more of the original ingredients as suggested on one of the fix-it websites I found. It really didn't help much either, but at least I was able to eat a few bites of it. Finally, I decided to pour out a large portion of the liquid and added several more cups of water. I think that was my best choice. It wasn't as flavorful as before but at least it was edible. I let it continue to simmer for a while longer before putting the left overs away. Hope the next time we try it the flavors will have blended a bit better.

I have done this a couple of times and I will start with usually trying to add more water or whatever the "base" liquid is. This sometimes will require more of the original ingredients whether that be meat or vegetables. If it is vegetables or meat hopefully you can pour the liquid off and start from there, hopefully without over cooking.

I did add more water (along with the other ingredients) to start with but didn't have much room left in the pot for much. Pouring off most of the over seasoned liquid really did help and gave me more room to add several more cups of water.

You tried the only two remedies I know. Put potatoes in to soak up the salt or keep adding more ingredients, unsalted to stretch the seasoning. I am glad you were able to pour off some liquid and make it edible. Salt can be a tricky thing.

I am really not fond of salt, so I use it sparingly when cooking, even covering half the holes in the shaker. If I'm having canned soup, I always add an extra can of water.
