3 Bean Chicken Chili

I created a new recipe on Monday night when Kristen had asked Jon to come for dinner and I discovered that there was only 2 chicken breasts in the package that I had pulled out to thaw. Not wanting to go to the grocery store, I decided to figure out something else. So here it is! Crockpot 3 Bean Chicken Chili Cut 2 large chicken breasts in small bite sized pieces and place into the crock pot with two cans of chicken broth and two broth cans of water. Stir in 1 tsp each of salt, fresh minced garlic, and minced onion along with 1/2 tsp each of black pepper and cayenne pepper. Add one 8 oz can of diced green chilies (Do not drain) and two 8 ounce cans of tomato sauce. Cook on high for 2 hours. Add to chicken soup mix one 16 ounce can of three different types of beans. You can use whatever is your family's favorites. I used one can of pinto beans, one can of red beans and one can of great northern beans. Cook for at least one more hour on low temperature. Be sure not to cook on high or leave crock pot on for more than 6 hours, or beans are likely to become mushy. I served mine with crackers! Happy eating!

Oh, that's ok. It is yummy! I love it because you can cook your beans, from dry beans, and add fresh chicken or if you're in a hurry, you can use the canned variety. One thing I don't have here in Arkansas is frozen green chilies! I have to use canned and they aren't as spicy as frozen!

I do not think we have frozen green chiles here in Kansas either. It is interesting to know that they are spicier. I know freezing intensifies some flavors. Why did you move from the country to an apartment?

Since Mike was diagnosed with Degenerative Disc Disease, he is not able to alot of physical things outside. Mowing more than an acre and taking care of a house and everything that had to do with that was more than either of us could keep up with. When the kids got old enough to be on their own more or less, we decided to do an apartment. It was great. No property taxes and if something goes wrong, I call someone to come fix it!

Lauren and I love to watch Top Chef on Bravo tv network. We were watching the other night, and a couple of the chefs made made a 3 bean chicken chili that was very similiar to ours. They used different kinds of beans, and their spices were a little different, but it was the nearly the same recipe! Geez! I should have patented it!
