Light Chicken and Pasta

Last night, we didn't get home until almost 8:30 p.m. Mike and I hadn't dinner, and wanted something hot, but didn't want anything really heavy at that time of night. Here's what I "created" Preheat Oven Broiler to high 2 chicken Breasts 6 new Red potatoes, quartered with the peels left on 1 zucchini, washed and sliced in 3/4 inch slices 1 package frozen whole green beans 1/2 bottle of Italian dressing Place chicken and veggies in glass baking dish. Pour Italian dressing over top of all ingredients. Broil for 10 minutes on bottom shelf of oven. Turn chicken and broil for an additional 10 minutes. Check chicken for doneness. I served this over bowtie pasta!

that sounds like a lot of Italian dressing, but maybe it really needed that much - you are a much better cook than I am, sure couldn't have come up with anything like that!

thats true, I sometimes put salad dressing on pasta as a meal - so I'm wierd, I know it, its because of these darn food allergies

Pasta Shells - My favorite kind of pasta
No, you aren't weird! one of my favorite pastas uses Caaesar dressing! Just straight out of the bottle and warmed a bit. Add some bacon bits to it and you're done! I especially like it with shells, because there are lots of places for the dressing to "hide"!

The extra Italian dressing with the juice from the chicken, makes the sauce for the pasta after the chicken and veggies are broiled. I didn't put anything on the pasta, just spooned the dressing and meat and veggies onto the top of it, and let it drain down into the pasta!

Well my husband and children sure seem to think I am a pretty good cook. The girls have boyfriends that tend to show up at dinner time, so that is probably a pretty good sign too! Hope you had a fabulous easter Sunday! It was rainy and cold here. My grandkids didn't get to hunt eggs outside. We hid them in every possible spot we could find in the house.

Will you get to spend either of the two upcoming holidays with them? I know we have a busy couple of weeks coming up! I can't believe it's less than 2 months until Christmas. This year seemed to have just flown by! We made Thanksgiving plans yesterday. Lunch with hubby and kids with a group of friends and supper with my Dad's family about an hour away.

thats what we used to do with the kids eggs when we lived in an apartment. years ago. it was still fun to them. i didnt get to be around any grandkids this easter, but theres more coming, i hope

I am always looking for new ways to prepare chicken. We have been eating a lot of poultry lately. Best bang for the buck! I would add some onion and peppers to this too. Thanks for the idea!

Onion Head - onions make my reflux rear it's ugly head
I have to watch how many onions and peppers I eat because of my digestive system problems. They tend to give me heartburn and reflux! If I uses spices and powdered onions and peppers, they seem to be easier on my tummy. I don't know what the difference is unless it is something in the processing!

Sorry for the late response. I"m going back through my discussions looking for responses that I didn't see or somehow missed. It's a cold and dreary day here, a good day for mylotting. Did you have a chance to try the recipe? The kids tried to make it while I was sick and got to much salad dressing in it, and everything was soggy.

I hope you've had time to try the recipe by now. Please let me know how it turned out and what you thought! I'm anxious for someone else to try it and tell me if their families liked it. Weather is turning nasty here. Not sure how much long I'll be on line tonight.

This sounds really good. I was wondering if you have suggestions for me about the pasta. I love bowtie pasta, and the whole dish you did is healthy, but I was wondering if I changed the type of pasta. The thing is, whole wheat pasta to me doesn't taste good. Is there an in between kind of pasta that is healthy, but tastes better than whole wheat pasta?

Your quite welcome. Just thought I would drop in and see how your day was going. It's cold here, so we're all trying to just stay warm. James and Mike are playing football on the wii. I'm mylotting. I need to run over to gather for awhile too. Haven't been on over there in almost a week.

Pasta - The different kinds of pasta
Have you tried the Yolkless Egg Noodles? I like them, and they are a little healthier than regular egg noodles. I don't like whole wheat pasta either. It just tastes funny to me! Pasta is good for you. It is supposed to lower cholestrol and it's low fat!

There was some left, I could send it to you! LOL My husband meant to take the left overs to work with him this morning for lunch, and he forgot them when he walked out of the house. He called me mid morning and said he was sure sorry that he did too because he also forgot his wallet and didn't have lunch money!

it seems to be delicious,here in india(mumbai)the staple diet is rice,the meal is considered to be incomplete without a bowl of rice.we do have pasta ocassionnally for breakfast.

Pasta for Breakfast - Here is a pasta dish with ham for breakfast
I like rice too! Although we don't eat it everyday, I probably could! It's also good for you. You will have to share a breakfast pasta recipe with all of us here at mylot. I love pasta and could definately eat it for breakfast, I think. I do sometimes eat leftovers from the night before for breakfast!
